Thanks. The bacon and Parmesan were the best parts. I couldn't find the pig head stuff so I settled for bacon. I imagine it's better with the pig head stuff.
Tbh I used turkey bacon better flavor and less grease. Maybe grease is needed for this.
First time making this. I messed up and scrambled the egg. Tbh I did like the taste too much. Very eggy. Not sure if not scrambling changes that. I've never had the dish before.

I was actually served this at an "Italian" restaurant near Ticino when I ordered "Carbonara Tradizionale"..... It's scrambled eggs with dry bacon and Barilla. No pecorino or cheese of any kind, no pepper. When I complained about what an absolute travesty they had shat out on my plate, the waiter asked me if I wanted him to get me some parmesan. Then gave me the spiel about how they've been making it like that for 20 years. I returned it and got a slightly less shitty pepperoni pizza where pepperoni apparently means bell peppers, despite the menu being in German. I fucking hate Swiss people.

I actually prefer a thicker slightly scrambled carbonara, not quite to that level but cooked so it's just almost starting to scramble, then pull it back with a splash of water, then repeat. Goes nice with thick smoked bacon. I like it the traditional way too but it's a different experience.
