I've been getting really into making omelets lately. This one I made with chopped spinach, a big scoop of cottage cheese, and sprinkled with grated parmesan. Then served with corn tostadas and scoops of salsa.

But how do I clean this stuff up? This is about the cleanest my stainless has ever looked after making one, usually there's so much more stuck onto the pan. But even still it's a pain to clean.

Usually I'll boil some water in the pan, scrape out the big bits, going at it with dish soap and a non-scratch scouring pad, washing it out and even then it takes Barkeeper's Friend to get the last bits off. There's got to be a better way, right? Is there some trick to know about? I can fry an egg without sticking at all, but for scrambles and omelets this is the best I've ever done, slow-and-low-and-covered. Any tips or tricks?

Season the pan by getting q neutral high smoke point oil hot in the pan. The pan will turn bluish brown. It now has a nonstick surface. Save oil and reuse to reseason when needed.

You should own one non-stick pan for eggs. It's the only thing non-stick pans are good for. It's like $10-30 for one depending on the size you want, which makes cleaning up take like 10 seconds, literally just rinse with hot soapy water then dry with a towel. If you're cooking eggs every day then it's a good investment and will last a long time as long as you're not an idiot and don't use metal utensils in it or put it in the dishwasher.

heat your oil or fat until you see any smoke, swirl it around the cooking surface and lower the heat. it will only last until you clean it. you don't have to use a bunch of oil

if you get the pan hotter then the egg won't stick. but you'll need to use clarified butter or oil because the temp at which the egg won't stick will burn regular butter.

Scrub it thoroughly and next time just season it just like you would season a cast iron and you won't have this problem. You will have to reseason it every time though but that's still easier than cleaning.

Every European supermarket sells these. Got this picture off of Walmart's website so they're available in the US as well. They clean the filthiest shit (yours), last ages and don't make scratches on stainless pans.
