Pease Porridge
Ingredients
500g yellow split peas
2 tbsp olive oil
1 onion , finely chopped
1 carrot , chopped
1 bay leaf
1 thyme sprig
1 tbsp malt vinegar
30g butter
Method
STEP 1
Tip the peas into a bowl, cover with cold water and leave to soak overnight.

STEP 2
Heat the oil in a medium saucepan. Add the onion and carrot and fry over a low heat for 10-15 mins, or until soft and translucent but not brown.

STEP 3
Drain the peas and tip into the saucepan with the bay leaf and thyme. Cover with about 1 litre cold water, bring to the boil and skim off any foam. Reduce the heat to a simmer and cook, stirring often, for 2 hrs 30 mins, or until the peas are soft, adding more water as needed (you may need to add about 500ml). Remove and discard the bay leaf and thyme. Blitz with a hand blender until smooth, then stir through the vinegar and butter. Season with sea salt and some black pepper, then serve with thick slices of roast ham.

Boil potatoes
Blend it all with your desired proportions of veg stock/starchy potato water and either add vegan cream OR slowly add in vegetable oil to potatoes while blending them and you can get a mayo-like thing going on which makes the whole thing creamier.
Pan fry some peas and peppers (and/or whatever other bright veggies you have at your disposal) and sprinkle them in. Here's where you could also soften a couple of garlic cloves to blend in the soup.

I am a traditional Latin Rite Catholic so I am following the traditional Lenten fast you can read more about it here. https://angeluspress.org/blogs/tradition/think-lent-is-tough-take-a-look-at-medieval-lenten-practices essentially we only eat once a day and we don't eat until 3 pm, we cannot eat meat (beef pork chicken) nor their products (milk butter eggs etc)
for lent I've been eating mainly salmon, broccoli and sweet potato, or lentils, polenta, beans and fruit as a sweet treat not all one the same day of course.

Spices Broth: A lazier quicker alternative to a vegetable broth.
Water, Onion powder, garlic powder, salt, black pepper, red chilli flakes, oregano, and rosemary. All to taste but the broth should mainly taste like garlic so use more of that than the rest and this broth is the base for other recipes to use with lentils and my personal favorite polenta. I didn't have polenta so I used finely ground corn meal the type that's used for corn bread and when stirred into the broth and turned into "polenta" (one part corn meal to four parts broth) it ended up tasting like garlic bread must try for lent!

Peel plantains and boil in water till tender at core. Mix with your favorite spice seasonings plus salt and mold into balls or small tubes, toss in flour or lightly brush with corn starch, then pan fry or deep fry till brown. Use your favorite dip or condiment and enjoy.

Chicken Kiev

4 skinless, boneless chicken breast halves (6 ounces each), lightly pounded to an even thickness
Salt
Freshly ground pepper
1 stick unsalted butter, softened
2 tablespoons finely chopped dill
2 tablespoons finely chopped chives
All-purpose flour, for dusting
3 large eggs, beaten
1 1/2 cups panko bread crumbs, crushed
2 tablespoons extra-virgin olive oil, plus more for frying
1 tablespoon fresh lemon juice
1 large bunch of arugula, stemmed

Step 1

Carefully slice a pocket into the side of each chicken breast and season with salt and pepper. In a small bowl, blend the butter with the dill and chives and season with salt and pepper. Spoon half of the herb butter into the pockets and pinch closed.

Step 2

Dredge the chicken in flour, tapping off the excess. Put the eggs and bread crumbs in 2 separate shallow bowls and season with salt and pepper. Dip the chicken in the eggs and then in the bread crumbs, sealing the pockets; dab any open spots with egg and sprinkle with bread crumbs to seal. Place the chicken on a baking sheet and freeze for 5 minutes.

Step 3

In a large skillet, heat 1/2 inch of olive oil until shimmering. Add the chicken and fry over moderate heat, turning once or twice, until golden and cooked through, about 8 minutes.

Step 4

In a large bowl, whisk the 2 tablespoons of olive oil with the lemon juice and season with salt and pepper. Add the arugula and toss. Transfer the chicken to plates and top with the remaining herb butter. Serve the arugula salad alongside.

Anyway let me post another lenten fast recipe.
Crispy oven fries: cut potatoes like French fries (no need to peel) then stick in salted boiling water gently and boil till the outer flesh of the fries begin to fluff up but not until the begin to disintegrate so watch them carefully. Gently remove the fluffy French fries from the water with a fine mesh spider and shake excess water and place on a baking tray. Preheat oven to 400 or even 425 Fahrenheit your choice. Cover the fluffy fires with the oil of your choice probably a high smoke point oil and the season to your liking but always at minimum salt them. I recommend minced garlic or garlic powder, salt and pepper, and rosemary. Put tray into oven and cook until crispy keep an eye on them so they don't burn and potentially flip them a bout halfway through if you want. Take them out let cool and enjoy better than deep fried fries.
