As for the oyster surviving five minutes; your original claim was that it dies instantly. I usually shuck and eat one at a time rather than doing a dozen and putting them on a tray anyway, so there's no five-minute interval for them to expire.

If they felt no pain then they wouldn't exist since they'd constantly get into damaging situations with no awareness and go extinct. Octopuses have multiple brains, one in each arm plus one central brain. A total of 60% of its neurons are located in the arms, the central brain with most of the rest is located close to the mouth near where all the arms join the body. The way the octopus in the op has been cut it's quite probable that the entire central brain is still in there.
