As some of you might know 80% of olive oils on the market are scam. They are made using old, rotten, bad olives, they are over processed and most importantly they are mixed with other very bad oils like soy oil and other bad vegetable oils. Sometimes what you buy is 80% vegetable oil and 20% of over processed rotten olive oil. These oils end up being as bad as vegetable oils with all these points taken under consideration. Vegetable oils are one of the worst things you can cook with. Olive oil = good cholesterol, Vegetable oil = bad cholesterol. All of these elements increase inflammation of the gut, IBS, various digestion problems, cancer, bad cholesterol, stubborn fat, gyno and many other problems. This is well documented through many articles and studies online but not public knowledge.

Now which oils are you guys cooking with and do you personally know a good quality olive oil that you would recommend to everyone? If you have gyno, chances are you consume vegetable oil or scam olive oil regularly.

Ok this is what I do. Look for harvest date, third party seals, do some test, research on the brand you are buying. Good olive oils should have the harvest date and bottling date printed somewhere, the closer to today's date the better obviously. Third party verification such as the Olive Oil Commission of California helps make sure the oil is actually evoo and not rancid or fake. I personally do some taste test as well, good evoo should have a distinct taste to it. I compare it to known good evoos to see if it's any good. Finally a bit of research into the brand you are buying. Did they ever let people look at their harvesting process? Do they have an active website you can browse through? How transparent and well known they are? Have they been known to produce fake evoo before?

Also for anybody in the US consider sticking with evoo made domestically since to my knowledge the US is a dumping ground for fake evoo. If you are in a country like Spain or Italy you probably (hopefully) are getting evoo, but I would still be a tiny bit paranoid.

There is no physical disease that causes IBS. it happens when you think a food is going to give you gastrointestinal discomfort so it does. I mostly cook with organic grass-fed tallow that I render myself. I get the suet from a local farm run by a friendly old couple who I know I can trust. It's the healthiest thing you can cook with and it's super cheap since most people are dumb and think beef fat is bad for you. I also use local grass fed butter sometimes, especially for sauteing.

I used to cook with olive oil (and still do occasionally, especially when I do fish, since tallow mixed with fish is disgusting). However I came to the same conclusion you did, which is that unless you know exactly where and how your olive oil is produced you're taking a big gamble and it's just not worth it.

pretty sure the ingredients list would have to mention it was cut with other oil types for legal purposes. I assume there are allergies related to different oils so if olive oil was being cut with vegetable oil and it wasn't listed someone could die or some shit if they were allergic.
