I think part of it was a consequence of president Eisenhower having a heart attack in his second term. He decided to go public with it and talk about his health, and the assumption was at that time that the culprit was foods with fats in them like bacon and eggs and other stuff. There was even a researcher who studied diets from multiple countries and made the same conclusion, but curiously left out Greece, a country with a high-fat diet.

It was only later on we started figuring out sugar was the problem, and that makes sense - the human digestive system has dealt with fat in food forever, but sugar is comparatively new, outside the rich and royal, sugar wasn't really available to most people until the late 19th century.

What's even worse is that sugar can act as an agent that dulls your body's ability to tell you that you're full, so it easily contributes to insulin resistance.
