I'm not that anon, but I think its pretty weird to pick on vegetarians for being malnourished when I'd say the average meat eater is probably malnutritioned as well. Its way more common to be constipated (lack of fibre from fruit and veg) and to suffer from high blood pressure, gout and fatty liver from overconsumption of fatty fried meat, lard and oil (which is probably what the majority of this board eats.) In comparison vegetarians and vegans, deficiency in is iron and vitamin B12 is relatively minor, easily detected and easily supplemented. The average vegetarian and vegan are also aware they may be deficient and take steps to ensure they eat a large variety of vegetables/legumes/tubers, which is a more nutrionally sound diet than eating chicken breast and potatoes every day.

NTA but as I understand it, two main things: B12 has to bind with haptocorrin produced in your salivary glands to survive the stomach, so pills lose a lot compared to chewed food (though obviously you can compensate for this). anyways, my go to vegan dish for nutritious summer kino is as follows:
>cold pasta salad
>thinly sliced heirloom cherry tomatoes from the garden
>pesto made of crushed pine nuts, arugala, watercress, basil (any green really), good olive oil and garlic
>top with sauteed oyster mushroom "bacon" and a sprinkle of nutritional yeast "parm"
>last of all is a squeeze of lemon (meyer lemon is amazing if you can find them locally)
it's fucking amazing, try it sometime.

A lot of vegetable is good for vegan recipes, i make pepper bell strips sauteed with tomato cherries and some tacos spice mix

I love also lentils, done with diced celery, carrots and onions with a splash of red wine when broil. Good as a first first course with pasta, spelt or oat or just a good side\second course

200g red lentils, a tin of coconut milk, minced shallot and garlic, curry leaves and a stick of cinnamon, salt. Cook that for a couple hours topping up the water as necessary.
Meanwhile, gently fry thinly sliced shallot until crisp.
To serve, in a couple tablespoons of oil fry cumin and black mustard seeds, garam masala and dried chilli until the mustard seeds are popping. Stir most of the oil through and pour the rest on top as garnish.

I often make what I call lazy fajitas. Throw canned refried beans in the microwave. Onions, mushrooms, and peppers on the skillet. When those are done sear the tortillas I'm going to use for 30 seconds on one side. Then add some salsa to each fajita. It takes like 10 minutes to finish the whole thing, costs next to nothing, and is really tasty.

If I'm cooking for other people I'll also make guac, Pico de Gallo, rice, and some black beans.

Classic hummus recipe

throw a cup of chic peas on the stove top in water and turn on high heat. when it boils turn it off
while you're waiting for it to boil, put between 1/3 and 1/2 cup of tahini in the blender
add 1 large clove of garlic, half lemon, table spoon of cumin, and salt to taste in the blender
Add the chic peas and a little bit of water. try to blend adding water until the consistency is right. taste and add more salt or lemon if needed

Put in a bowl and use a spoon to carve out an area for the olive oil. add cut some parley and add with paprika

eat with warm or toasted pita bread

Not exactly vegan, but can be made vegan pretty easily. I'm not a vegan or vegetarian, but I do enjoy eating tofu and some vegan food.

Pasta with pumpkin.
Pasta and beans.
Pasta and chickpeas.
