If you want a real chicken thigh recipe:

-Cut slit in chicken thigh along the bone (~1/2").
-Skillet skin side down on high heat until you hear it sizzle.
-Turn heat down to medium-low, cover and let the chicken cook for 16-18 minutes. Turn to low if it's darkening too quickly.
-Remove thigh once cooked, then fry mushrooms, onion, garlic and deglaze with white wine. Reduce.
-Spoon pan sauce onto plate & set chicken atop it.

Depends on the size and if they're boneless, but that's about right for bigger bone-in thighs. It's not like chicken breast where cooking it above 160F internal temp makes it tough and dry. You want chicken thighs cooked to 180-200F to break down the collagen.
