The root cause of a bunch of the most common causes of death in the western world including heart attacks is damage done to the lipoproteins that transport fat and cholesterol around the body through the bloodstream. Once damaged they're identified and eaten by macrophages, at which point any fat or cholesterol in the lipoprotein now just fills up the macrophage, turning it into a foam cell. These foam cells are what find their way into artery walls (from the blood vessels on the outside, not from the bloodstream itself) and cause blockages if enough of them build up before being cleared.

Think of lipoproteins as balloons. Your liver stuffs them with fat and cholesterol, sends them out around your body to deliver it where needed, then when the balloon has shrunk back down, the liver takes it back up, refills it, and the cycle continues.

"Low density" lipoprotein is just a lipoprotein that happened to be low on cargo when your blood was tested. "High density" is one that has only recently left the liver. The size of them has nothing to do with anything relating to heart attacks. The entire problem is doing things which damage them and force macrophages to deal with them, creating foam cells.

I'd be very interested in any kind of study where lipoprotein levels were monitored before/after eating meals of varying compositions.

And at least link a credible organisation, not one whose defense as to why they didn't know about the huge spike in vaccine-related injuries in 2021 was "oops we just didn't look at our system for monitoring vaccine-related injuries".
