I try to think of the definition in a less gatekeeping way and more of a conversational way. Hot dogs are also ingredients/condiments surrounded by bread, but there are so many hot dog variations that they have their own category. Burgers are similar. Gyro and pita wraps, what else would you call them? They don't deserve their own category and they're ingredients and condiments surrounded by bread. Just call them a sandwich

Rachels are typically turkey, not pastrami.
Both Reubens and Rachels can be either sauerkraut or coleslaw (typically the former is east coast and the latter west coast).

I think a Gyro is closer to being a taco than a sandwich. A thin layer flat carbs wrapped around the ingredients. Pretty much any true sandwich is going to have more of a proper bread and utilize two slices of it. However if we're going to continue to be pedantic I'd actually argue that pita wraps like Gyros/Falal/Shwarma are distinct enough to warrant their own category just like sandwich/burger/taco/hot dog.
