Sounds reasonable, isn't necessarily true unless you prove it by experiment. Cold start frying is a thing for fries, don't see why it wouldn't work for onions. The cold onion doesn't absorb shit, around boiling point it might push water away a little less violently than with hotter oil but I'm not sure it matters.

They use sodium hydroxide to neutralise free faty acids. Do you fear bagels too because they are made with sodium hydroxide?
Cold pressed oils don't use hexane (in theory, just like EVO is real in theory).

The only step which is actually unhealthy you don't mention at all, deodorisation. Regulations for high temperature by products are getting stricter though, so the processing temperatures are going down.

its really not close. americans prefer their cooking oil to be odorless and taste mild, if any flavor. Blind taste tests and consumer data shows americans will select rancid olive oil over fresh olive oil because its flavorless. Tallow has a very distinct smell and it used to be sold after diluting it with baking soda because the smell was so pervasive. Its a notable difference when you smell and taste beef fat fries, so much so that mcdonalds uses "natural flavoring" to emulate the hint of beef flavor their fries used to have. you ought to try undiluted beef tallow at least once so you can see just how radically different it is than deoderized oils.
