You are better off doing a stock first then assembling the soup, but his method is sort of a hacky middle ground way to get to chicken soup faster. You'd actually get that shit done faster with pressure cooker since speed is the goal there.

Also you might want to chop your onions better than he did. Also noodles/pasta go in at the last minute in accordance with the cooking time.

Chicken soup is unfuckupable. Just take whatever chicken parts you want, whatever vegetables you want and whatever spices you want and boil all that shit for a few hours. If you want to make it good, make sure you use chicken parts with plenty of bones, I personally prefer just drumsticks but a whole chicken like your vid is a fine choice. Fresh garlic and onions are an absolute must. If you want to add carrots make sure you slice them thin- any soup vegetables should be chopped up small but for carrots it's especially important. Spices are entirely a matter of personal taste but I find sage goes excellent with chicken in all cases. The only real trick when it comes to seasoning is adding just the right amount of salt, and that skill only comes with practice. Finally, and this part is very very important, don't listen to a thing this complete fuckup >>18715424 says.

Adam is always wrong by default, if only because of his god awful cutting technique that he vehemently defends in the name of autism.
His method is just kind of dumb and round about. You'd be better to part the chicken, then make your base stock. You can get way more than what he did and it has a lot of uses. Clear chicken stocks are fine, roasted will be better for soup though. He only cooked it for 1 hour, which is stupidly fucking short considering he has a whole bird with bones and all in there. A stock should go for at least 2 hours and you can add way more aromatics than just half a fucking onion. He overcooked his meat and dumped so much shit in there so it doesn't look like soup anymore.

The biggest problem is he has a whole fucking chicken's worth of fat in that soup because he didn't bother to strain, separate, or skim. It looks gross and greasy.

Just do chef john's recipe.

If you must insist on making your own stock from drumsticks, just get fucking chicken wings or drumsticks and save the breasts for something nice. He himself says it around 7:00, breast meat turns into shitty strands of dry chicken, whereas brown meat will somehow hold its integrity while still falling from the bones. Feel free to strain, I fucking won't.

I mean, if you really are lazy you don't need to roast them but quite honestly you're just missing on a lot of fond and nice flavors. At least fry them in the pot a little before putting anything else so you get halfway there. No matter what it'll still taste like chicken so it's not a big of a deal.

I think Adam is out of his debt when it comes to the texture. Zucchinis don't fit neither in taste nor in texture in a chicken soup IMO, the onions are not chopped at all (imagine the strands as you try to slurp some chicken or some noodles), and you don't need to do a fucking mirepoix everytime you're stewing or making a soup and the parsnips make me feel like he's using a veggie soup recipe for a chicken soup recipe, which is retarded and a waste of a good chicken. I would've just gone with carrots, chopped onions and some leek to give it that garlic-y flavor and let the chicken do its magic along with whatever carbs go there.

Not a single drop of spice. I can understand why some agree, I personally don't, and I think that soup wouldn't be bad with some additional flavor profiles. Either a little nutmeg, or alternatively some paprika and cumin. A little goes a long way. Oh and more importantly, some herbs that aren't just there for presentation. Coriander or parsley does wonders provided it cooks along with the soup (i don't get the point of garnishes, the soup is colorful enough).

I think the best way is to cook a chicken, eat the good bits of meat then boil up the bones and other bits for soup. You can re-roast the carcas for extra flavor if you have time but not important. By far gets you the most bang for your buck out of chicken.

Hey I tried an alternate method that works pretty well actually (With browning):

>Boil chicken in water - enough to cook it, not enough to ruin it.
>Partition the chicken (dead easy when it's cooked) and separate meat and carcass/bones.
(The meat is no longer part of the soup story*)
>Bones and carcass goes in a roasting tray for browning, then goes back into the pot to provide more flavor
Once you've boiled all the flavor off the browned carcass, you discard it, then continue to make soup as normal.

It's a lot like making vegetable soup with chicken stock, except you keep all the meat for a different dish.

*Now that it's all off the carcass and bones, store it in the fridge for tomorrow. You can put all the meat skin-side-up under the broiler for re-heating. Boil-then-roast turns out to work surprisingly well .

Its easier to get chicken bones from the butcher shop, roast them at 450 until theyre deeply brown and rendered their fat, then boil them for at least 2-3 hours, with the aromatics going in in the last hour. Then you top it off with water, strain and chill over night.

Then youd remove the fat and cut off any sediment, and you've got yourself the stock base and can do whatever you want from there. Id probably boil up chicken breasts in the stock, then take em out and shred em, then back in the chicken would go alongside carrots and onions, with rhe noodles going in last til they were cooked

I make a concentrated chicken stock "bouillon" that follows what I just wrote that i reduce down to a very thick syrupy and gelatinous final product that's a great food hack/umami bomb. Its a fun little weekend project
