The PID is what keeps your from having to heat cycle the machine, which you were bitching about. Its an extra logic circuit that measures the temp and autoregulates to the temp you set. You set it at 95c, it kicks the heater off at 96 and on at 94.

So far the only machine which is within the budget is pic related (LaPavoni casabar PID), but I can’t find info online.

I guess that I’ll decide between the Gaggia Classic, the Silvia V6 and this LaPavoni, but so far I’m leaning towards the Silvia because it’s well documented and known, therefore it should be easier for me to find info post buying.

$40 might be a little to low. At that price you'll have trouble finding anything that doesn't have some kind of weakness.
Either the burrs are okay-ish, but the rest of the construction is cheap plastic, or the body is okay-ish quality and the burrs are shit.

You can find decent options for $60 though if you're willing to spend a little more.

It won't affect how hard it is to grind much. The things that more expensive grinders have are better build quality and better burr designs, which (generally) increase the quality of the grind. An electric grinder would significantly effect how easy it is to grind, but that's a whole other topic.
Like the other anon said you can get some passable grinders for $60, but the cheapest I'd go if you want an actually good one is $100

Anyone ever use an Ember mug? I won one from a work contest. It seems cool but also it doesn't even really seem to work? It keeps the drink warm but not like... hot. I like a moka every once in a while. how are you making it? I make it by: boiling water, pour it into the bottom, pour in the coffee, assemble the parts twist tight but not too tight, put on the burner for medium or medium-low-ish heat. Wait for the water to steam through and pour out the top. It should be a slow pour from the spout and not a violent bubbling. Some sputtering will occur, I've never gotten it not to occur (and if it doesn't it probably wasn't hot enough heat to produce a good taste coffee). Once its done pouring out, take off the heat and use hot hands to disassemble it and keep the top part on a small plate. Pour and enjoy.

I wouldn't say my coffee ever comes out "sour". It comes out as they espresso-like brew that mokas produce. Usually stronger in profile/flavor/etc than something like a V60 or drip machine. Sometimes it's even a little sweet tasting, in a way. Does that sound anything like how you make it? I think most people 1. don't boil their water before hand in a kettle and 2. use too high heat when it's on the burner

the lesson I learned when trying tons of supermarket coffee is if it doesn't have an exact roast date it's always terrible. if it does it's at least fresh so you have to find a flavor you like among the fresh ones but generally speaking it's a waste of time because there's a 1% chance that a good coffee roaster will supply a grocery store with top tier coffee. they always do their own thing, usually online or in a small specialized shop

Ok, after a night of research I finally decided to ditch the Silvia V6 and other PID machines and settle for a Gaggia Classic Pro because at least it’s way cheaper than the others (399€ vs 575€ of the Silvia and 750€ for other PID machines) and I’m more inclined to learn how to temperature surf without a PID for this amount of money, also it’s way faster than the Silvia to warm up and should last at least 10 years minimum as well.

About a month back I was here asking for advice on picking a manual coffee grinder so I can grind beans for my moka pot. People here helped me pick the 1zpresso q2 as a starter grinder and I've been using it for the past couple of weeks. I'd like to say thanks. Someone even linked me the instructions on how to adjust it for a moka pot which I knew had to be a bit coarser than espresso. It did make a difference, I was able to fit a couple of grams of grounds less in the basket (when compared to to the espresso grounds I'd been using before).

And it might be my imagination but the flavor does seem to be better now. At the very least it's more consistent. Before, sometimes I'd get a cup that was too bitter or acidic, but now it's perfect every time. And using the grinder is next level satisfying, thanks for the help lads.

You're probably right about the ceramic, but it's kind of funny that you're dismissing copper as being for "Style points" when it's more thermally conductive than just about anything else (unless your cone's made from silver or diamond) - it would heat the most evenly, but it would also cool the most rapidly, where porcelain would be a happy medium between needing forever to get up to temp and holding that temp.

I was given a copper V60-ish pourover a few years ago, something a friend made, and it does work great, but it comes with a few caveats (that I already knew from brewing beer)
1) You want to clean and dry that shit. Oxidized copper's ok, but copper salts are bad for piggy's digestion. If you start seeing verdigris (blue or green), scrub it off.
2. A warmup's not a terrible idea, but it's nowhere near as effective as it is on porcelain or glass, because the copper cools down (and also heats up) much faster.

I store my green coffee in very heavy gauge plastic grain bags at around 60ºF in the basement. I am very careful to remove all the air from the bags, and I seal them airtight. My green coffee lasts about 18 months before I notice flavor loss. I dip into the mothership bags to retrieve about 5lbs at a time. I'm less careful with storing the smaller bags because I use that up within a few months.

I store roasted coffee in regular 1qt Ziplock freezer bags in the kitchen cabinet at room temp (70-75ºF), squeezing the air out every time I open it. It stays fresh for about a month, but I almost always drink it within 2 weeks.

The important theme here is protection from oxygen, humidity, excessive heat, and UV light, all of which degrade coffee at all stages more quickly. The problem with mason jars is that you cannot easily remove the oxygen. They make coffee storage canisters with vacuum pumps, but I don't bother. You can suck the air out of plastic bags by sticking a straw into the corner and sucking if you really want to. You can also buy one-way valve bags, but those are more for selling roasted coffee. You'll have to heat seal them again every time once opened to be on the level of a plastic bag or a fancy vacuum canister.

I'm doing weird melodrip+lilydrip shit. Way less churn/agitation than ekg pours so the fines flow down in the bed and help filtration. Those bigger bits look like <1400 micron on the brewler. 3:15 drawdown 20:320 with abaca filters. Complex, floral, juicy as fuck, real fruity. Definitely getting the raspberry and hibiscus but I can see where others get jasmine. Its so good I'll make another cup just for you. I'll try to shoot for the same drawdown but way finer. 21 lbs left for the homeroastgang. $40/lb for everyone else.
