After you're done frying, throw some diced shallots into the pan, let them get some color, then throw in some tomato paste, then deglaze with 1 part red wine and 1.5 parts beef stock. Scrape/stir well and let it simmer and reduce for 10 minutes. You've now got a clean pan and a bomb ass gravy to go with your ham. It's a traditional american thing. Ham or steak and gravy used to be a staple of diner food. Now that "diner culture" is mostly dead it's pretty much confined to the south and midwest.

Well that's the only gravy I've ever put on ham in my 42 years of life. I just ASSUMED it was that packet that came with ham. I honestly don't use it much if at all and just use it in carrots or disgusting vegetables.
