well, there are certain dishes that are traditional for the new year. pic rel. mostly pretty simple stuff, actually. if you wanna go for something more flashy, you could do bao or peking duck. don't try to do drunken chicken unless you have access to proper rice wine, lots of cookbooks say you can substitute sherry but a chinaman can tell the difference

see if you can get some black pepper sauce from your local asian market. the chinese always slather that shit on steaks. you can make your own if you want, it's garlic and black pepper and this stuff called "douchi" (don't skip the douchi, that's a real important flavor, it's soybeans fermented until they turn black and taste kinda like dark chocolate), thinned with water and worcestershire

even so, I see a lot of white cooks try to do drunken chicken and fuck it up cause they refuse to use the right ingredients. theres lots of other stuff you can do.
if you want to torture yourself, hong shao rou is delicious. pork belly braised in seasoned broth. but you gotta reduce the liquid down to a glaze with the meat in it, which takes forever at least on my stoves and risks burning. but I've seen vegans eat it.
