Do you have a dutch oven? Are there any dishes you make with it that you couldn't make (or couldn't as easily) as with a regular soup pot? What are they? What size DO do you like best?

I'm organizing my kitchen right now, and thinking about setting aside some cabinet space for one that I might pick up next time they go on sale. I hear they're good for gumbo and broiled chicken, but not really sure why I couldn't get by with other cookware I have.

my beef bourguignon and braised chicken thighs are better and easier in a dutch oven, though CAN get similar results without one.

They're also good for chili, bread, oven roasting a whole chicken (for the larger size dutch oven).

I got a 6qt amazon basics dutch oven for $40 last year. I've cooked maybe 5 dishes in it. Shallowed fried chicken, osso buco, Dublin coddle, and a couple beef stews. Good for frying/braising meat, or long simmering stews, even to bake bread which I haven't tried yet. While it's not my most important cooking device, it's definitely useful to have one

Have a larger ceramic coated oval dutch oven and I keep it stored in my garage on my kitchenwares shelf. I bust it out for the following dishes:
Flamande
Brasato or any pot roast
Short ribs
Bolognese sauce
Whole or sectioned chicken dishes (not soups though)

Advantages are I've used it on all types of heat sources; natural gas hob and oven, propane grill, electric coil, glass-top electric, electric oven, etc.

Only drawback is that since there is a ceramic coating I can't use an immersion blender directly in the pot.

I like an actual 4qt. I don't often need the size of a 5-6qt, and 3qt is indeed too small for the effort of making something that is literally only 1-2 servings.

Chili and any soup with beans really does well in it. This could be lentils or pasta faioli. It could be some a big pot of greens, a simple base of bacon and onions lining the bottom of the freshly rinsed mustards or collards. No sticking and no burning if you lose a moment of time in your busy cooking night. Creamy soups do better, like a potato soup, or a cheesy broccoli. I like to make a quick corn chowder, or a nearly quick pozole, and the hominy that sinks to the bottom stays unstuck.

Of course you will need a nice wooden spoon or silicone spoonula and a nice soft ladle to keep the ceramic lining nice. I love my staub silicone coated twin hardwood which is really a coated "spurtle" which is very versatile.
