Plants don't have much protein, and it's harder to digest. I think there's also some variation between individuals on how well they digest plants. I read a long time ago that there are some differences in intestinal length between some groups of people. Someone theorized longer intestines indicate better digestion of plants.

Eat whenever you feel hungry.
Don't drink water 30 minutes before, after or during your meals. It will give you the runs.
Aim for a 2:1 fat to protein calorie ratio. That's 80:20 ground beef or rib eye. You know you've had too little fat if you get constipated, and too much will give you loose stools.

carnivore here for 6 months now. Meat-Salt-Water, nothing else.

Went on it to heal severe Ulcerative Colitis (got to shitting straight blood 17 times a day even on meds). Was this close to getting the surgery purely to save myself from too much blood loss. Doing better than ever. Off 95% of my meds. Practically symptom free. Brought me back from suicidal thoughts too. Also got rid of my acne (for the most part), dandruff, brain fog, and brought more emotional stability (even compared to when I was healthy).

Deficiencies?
None, I check my blood every month. Vitamin C requirements are a lot lower on 0 carb diet because glucose (any carb source) has metabolic competition with vitamin C. Vitamin D can be acquired from bone marrow, brain (and fish, if you're open to eating fish on this diet).

Fiber?
Unnecessary to the human body. If it was, myself and many others would have their condition worsen.

Other diets?
Have tried other diets, have tried eliminating things individually - nothing helped nearly as much as this.

I'll be honest, sometimes it gets a little boring. But eating nose-to-tail and cooking meat in a variety of ways helps alleviate that boredom. There are carnivore diet variations which include avocado, eggs, hard cheeses - I'm only on the strictest version (red meat /only/) because it's the one that's recommended for the severity of my condition. The cravings for other things go away a few weeks after starting the diet, and I think that's in part because of hormone regulation (ghrelin/insulin/leptin), as well as always having my B vitamins at high levels. You never feel tired, unsatisfied, etc after a meal. You don't get that feeling of "ugh i'm hungry again" soon after because your blood sugar is always stable, and that in part affects people's desire to snack.

I only drink water, and sometimes the broth from braised short ribs/veal shank. I personally advise against having coffee, simply because I don't think it's worth being reliant on a stimulant to operate normally, or ruin one's biological clock.

You're probably just not using the right cut of meat.
My best advice would be just a general youtube video explaining which cuts/areas benefit from braising/slow smoking/boiling (shank/chuck/shoulder etc) and which best benefit from frying/grilling (liver/skirt/sirloin etc)
The difference is usually simply the amount of connective tissue.
If you happen to be frying a piece of beef, and despite the short cooking time (+ it still having some pink) it's really tough, you're probably just /undercooking/ it, and you're not allowing the collagen to melt, since it needs a lot of time to spend at a certain temperature.
