I used to make a great Valentines day curry with beets. other root vegetables as well like parsnip, potato and rutabaga. BRIGHT RED.
Roasted, pickled and made into soup are also good--but you need to start with good beets.
Can't get blood from a turnip.

Roasting them IMO. Brings out a lot of the sweetness, and if you want you can candy them too.

There aren't a lot of vegetables that don't taste good if you roast them proper.

This is the defacto best way to roast beets. The recipe sounds delicious, but ignore it and just cook the beets as suggested. Truly delicious.

>grounded pepper

>applecider vinegar to taste

also make meatballs

when mixing the potatos and beet mix add the juice from your meatballs

I boiled them, then I grated them and finally I fried them in oil
