idk if it's the reason i get crispy skin on my chiggumz and dorkeez, but I mix freshly powdered spices, dried herbs and pasted aromatics with mayonnaise, rub the mixture under the skin as well as in and on the bird and roast at high temp until done.
Crispy every time.
My mum used to do something similar but with olive oil instead of mayo.
