Funnily enough, he does do that sometimes. In his In-N-Out video he used cheddar and provolone over American when in reality a staple of American fast food burgers is their American cheese, which is superior in that specific application.

Another instance was his queso video. He made two versions, the basic Tex mex queso that is pretty solid made with American and Monterey Jack cheese, and the a fancy version with some crazy expensive shit. Surprise surprise, the fancy queso didn’t come out right because he had to make a roux for it and came out a grainy/floury, and when he tasted them he recognized that the American cheese one had the better melty texture that is expected from queso he still claimed “my fancy version tastes better.”

He couldn’t accept the superiority of American cheese in the very few instances it superior to other cheeses, because that’s “fake cheese” or whatever. Just accept that people like American on burgers because it works so well, I love cheddar, parmesan, swiss, munster, provolone, all that shit, but there are some instances where splurging on something that is higher quality or objectively tastes better in most instances, doesn’t negate the few instances where that’s cheap ingredient shines.

For sausages, mincing whole cuts by hand into ground meat is perfectly acceptable and will get you a nicer texture, in many cases. That is the standard in most of Asia today, even. It doesn't work well for burgers, however.
Many applications of food processors or blenders can be replicated by hand. This includes mayo, hollandaise and other emulsions.

Some things you can't replicate by hand.
Sous vide cookers are like microwaves or ovens. You either have one or you don't.

Stand mixers are actually great, because mixing shit by hand is exhausting. And exhausting work means people are unlikely to cook again. So while you technically can make everything without one, it makes literally cooking anything a walk in the park. Bread - toss ingredients in and boom - dough ball. Whipped cream, meringue, ice cream, all sorts of stuff can be made with one, and they double as a food processor or meat grinder with attachments.

I'm gonna assume that some other anon posted it but the simple answer is that people watch these YouTubers because they do shit that they wouldn't bother replicating in real life and that's part of the fun. The idea of using exotic ingredients is fun for a lot of people, they're watching for entertainment, not actual cooking recipes they tend to want to make.
Also, those types of video where the creator uses a bunch of wild ingredients is probably what does better anyways, more people watch for the fun of it. No one needs to watch the 30 videos on how to make a boring meal. Sure, there's exceptions, and usually those creators are a good mix of charismatic and informative so that they are able to grab an audience.
Also, this surpasses YouTube, as back on Food Network the more popular shows were always shows that weren't just chefs cooking normal meals. I'm sure Chopped was one of the most successful shows because it was entertaining to watch chefs compete in challenges with whacky ingredients.
