Greetings you may remember me form some days ago making my own bread.
After letting this sucker sit in plastic wrap for 3days, I can say it's much improved.
The crumb which was a little wet, is now adequately dry for cutting.
The kernels which were too dry and tough, even for me(the whole reason I made this bread because I wanted something more tough and chewy) the kernels now are all entirely chewy and not tough.
Seems the hydration in those three days distributed evenly between the too dry kernels and too moist crumb.
What I have right now is quite perfect and something I would serve to other normal people.
Guess I don't even have to gelatinize the kernels.
Anyway great success, my first bread turned out to be near perfect. The only thing I would experiment with is the shape of the overall loaf.

100% rye bread, with lots of whole rye kernels. Homemade sourdough ferment, homemade rye malt flour, 25hour cold proof, 6 hour warm proof. no sugar, only salt, bit of spices.Bread.

Damn, americans live in luxury if prisoners get fed such fine cuisine for misbehaving.
I usually eat bread with something, but this thing really goes best without adding anything else.
