Best bet is look at old 70s-90s cooking shows like Julia Childs, Jack Pepin, Justin Wilson(cajun) and others.
Others Good ones that are technical but are accessible are:

I hate his("Chef" John's,) quirky "hook" of his fucked up modulation when speaking--I seriously doubt he talks like that off camera. But his cooking methods are solid.
At least it's not cooking with Jack.

Look at any video 5+ years older on his channel, he talks normal and never hid that it's a gimmick because it got a lot more views.

I recently got into chef Jean Pierre. To me, he has the most charisma and best personality. Way better than the millennial/zoomer guys like chablasky or Weissman or babish and not as dry/boring as chef John(who I still really like). Jean Pierre is more like a old school pbs show without the obnoxious editing.

Exactly, these guys give rundowns on how the things work and what goes well with what, instead of being a visual aid to a book.

Such horseshit real chefs use recipes because you can't hold all of that info in your head
If you don't keep notes you're still a cooklet
