Here's the thing about mushrooms.

If you're cooking at home you can just rinse them in cold water. It's fine. They will not turn mushy.

If you are doing prep in a restaurant and have to clean enough mushrooms to last for a week you have to brush them because rinsing them and then storing them for several days WILL make them mushy.
That's the difference. Most chefs don't even know this because they're retards who just memorised what they were told instead of ever thinking for themselves.
