I JUST got power restored after the storm, thanks again guys for your votes. I really expected more people to compete in the last round. Vegetarian cooking is NOT my forte, I will see what I can do. Alrighty, Vegetarian 3-bean chili. Extremely hearty.

1 each Red and White onions
1 whole bulb of garlic
1 medium sweet potato
1 each red and green bell pepper
2 large jalapenos, one de-seeded the other not.
1 can (or three good ears) of corn
4 or 5 large stalks of celery
1 large can kidney beans, drained and rinsed
1 large can black beans, drained and rinsed
1 large can chili beans, do not drain and rinse these.
28-32 oz tomato puree
Cumin, hand-rubbed whole oregano, black pepper, ground chili powder of your choice (EXCEPT cayenne, that's for later and I used California chili powder,) sage, ground mustard.

Cut all vegetables into chunks about the size of the kidney beans, except the garlic which gets sliced into 1.5mm thick rounds.

4 tbsp butter into a large pot, heat it up on high until the butter browns, toss in the jalapeno, garlic, onions, and corn. Cook for 5 minutes, until vegetables start to get soft.

Toss in the bell pepper, sweet potato, celery, add about 4 tablespoons of salt to force water out. Cook for 7-8 minutes, stirring occasionally. Stain vegetables from liquids, discard liquids, return vegetables to pot and return pot to stove.

Add all of the beans to the pot of vegetables, mix well. grind up about 1 tablespoon of black pepper into the pot, stir. Add all of the tomato puree/sauce, allow to come to a boil, add the spices and half the amount of tomato sauce worth of water. Bring to a boil, reduce heat to low, simmer for a minimum of 2 hours, stirring occasionally.

Serve with rice, dust with cayenne pepper, garnish with lime.

So guys, I've had guests over and had to upsize my original idea. I've made a vegetarian tortilla platter served with 2 dips and a salsa/salad:
- Black Bean Dip, flavored with cumin, garlic, chilies, creme fraiche and cilantro, topped with alfalfa sprouts and goat feta cheese.
- The other one was made by my neighbor at my place (under my supervision), it's a guacamole with shallots, garlic, cilantro, lime juice, salt and a little pepper.
- Third one is a quick salad made with cucumber, heirloom tomatoes, shallots with balsamic vinegar and a quick drizzle of olive oil.

Sad to say, my tortillas I made last night did not end too well and these ones in the pic are store bought.

More on the black bean dip, I soaked the beans overnight, boiled them until they broken down. After they broke down, I added in chopped cilantro stalks, leaves; chilies, 2 large cloves of garlic, cumin and a tiny bit of vegetable stalk, cooked that down a bit more before I blended the whole lot in a blender.

After that, I cooked it down a bit more to reduce the liquid and thicken it up. Finally, I added in a spoonful of creme fraiche and folded it in, to give the dip a smoother, fuller flavor and texture.

Transfer the whole thing to a bowl for serving, garnish with crumbled feta made from goat's milk and alfalfa sprouts.

My household is comprised of some very dedicated meat-eaters. They were a bit skeptical when I announced what the challenge was for this week. Luckily, everyone was pleased with the results of my hard work and we celebrated Labor Day in an unconventional way by giving the grill a rest.
I created a vegetarian meal worthy of a holiday or special occasion. It is balanced by taste, color, nutrition, and texture. There are three parts to this dish making up a single entry.

The first part is a Carpaccio of roasted beats and pink lady apples presented over a celery leaf, Belgian endive, and cucumber slaw. It is bright and refreshing. The earthy beets are sweet and mix well with the crisp apples. The slaw is like a summer cocktail and has a delightful crunch.

The next part of the dish is the sweet potato and kale colcannon. An Irish dish typically, I have remade it to highlight some of the wonderful local red sweet potatoes, emerald green kale, and fragrant garlic all grown in the very parish that I live in by some of my neighbors. It is creamy and comforting.

The final part of the dish is a terrine of mushrooms, roasted chickpeas, and goat cheese. It is by far my favorite part of the dish. It is sort of like a falafel pate. I found it satisfying and rich. The leftover terrine made quite a delicious sandwich filling. I broiled slices of it over rye bread and topped it with spicy arugula, thinly sliced pear, and a bit of Creole mustard. I am going to make this again to keep on hand as it seems to be quite versatile and addictive.

Pearl barley risotto.

2 onions.
280g. of pearl barley.
1L. of water.
400g. of asparagus.
200g. of chanterelles.
4 tablespoons of apple vinegar.
4 tablespoons of honey.
2dl. of apple cider.
1 shallot.
Salt and pepper.

Take the onions and cut them into about 12 slices each, put them into a pan with low heat and some neutral oil - fry them until they are slightly golden. Add the apple vinegar and honey and let it all boil in, until there's almost no liquid left (this should "pickle" the onions).

Clean the pearl barley and fry the finely chopped shallot in some oil, add the barley and let it fry. Add the cider and let it boil for about 5 minutes: letting the barley soak up the apple flavour. After that you merely add water and let it boil for around 20 min. until it's risotto-like. Add salt, pepper and a final splash of cider at the end.

Finally cut the asparagus and fry them together with the chanterelles in some olive oil, salt and pepper for a couple of minutes. Finally add and knop of margarine and the pickled onions in the barley - serve with with the asaparagus/chanterelles.

If this weren't a vegan/vegetarian dish, you could use chicken stock instead of water or you could add some cheese to the risotto/use butter instead of margarine.

Not what I had planned for the challenge, but life happened.

So, fall harvest crumble, with apples, pears and strawberries. The fruits are cooked with maple syrup and the crumble is butter, whole wheat pastry flour and oats flakes.

Making a vegan version of this, you would swap out the butter for vegetable shortening.
