eggplant thread~

So I just used eggplant for the first time yesterday. I sauteed it in olive oil with salt and pepper, turned out quite good. I'm curious if I got it just right though. At what point is it done cooking?

you dun good OP, slice and salt then wrap in a paper towel and put a plate or book on top and let the water come out so you get a crispier less soggy product.

Be liberal with the salt, you will shake off any excess before you're cooking it.

or you can dice and rub'em in salt, wrap it with a towel, let it sit for a while.

deep fry it and cook a thick tomato sauce with lots of garlic, a pinch of sugar the cut the acidity from the tomates and olive oil in it. add your spices of choice.
serve it like this: eggplant at the bottom, some plain yoghurt(don't overdo it), and the sauce on it. should be a nice appetizer. it's better when the eggplant has cooled down and the sauce is warmer.

this is one greek/turkish way to cook it

Watch the Good Eats episode about eggplant.
Now I always cover the eggplant in salt for an hour or so to remove the excess water.
It really makes the eggplant more meaty and substantial, like a nice portobello or something.

Here's my favorite recipe:
>chinese eggplant
>cut into quarters, length wise
>cut these long strips into thirds
>put into a ceramic bowl
>add a lot of soy sauce (light or regular), enough to cover the bottom 1/3 of the bowl
>possibly add a bit of chili pepper or a bit of vinegar
>drizzle sesame oil over the rest of it
>add tons of chopped garlic on top (so it looks like a bowl of chopped garlic)
>steam for about 10+ minutes or until eggplant is tender and edible

eggplant is really good with marinara sauce.

eggplant lasagna, babaganoush, eggplant hummus...

but i find that for hummus/babaganoush, it tastes find of burnt. i did my research and grilled eggplant is supposed to have that hint of burnt taste, which is unpleasant for me, personally.

eggplants used to be white, hence the name.
same for tomatos that were yellow for quite a while, hence being called "gold apples" in many languages.

You must have used too much salt.

I recently started to de-water my eggsplants with salt during 30min to 1h, then rinse and dry. I finally got rid of this unpleasent and kind of bitter taste they had :)
