A lot of flavor houses are from the east coast. They focus a lot on the meat and cooked flavors. They also do a lot of natural flavors too

oh boy here we go. We often had this discussion in class when I was in grad school. People have to understand that the food industry is business. Were looking to make money not look out the well being of consumers. Consumers have plenty of choices, if everyone stopped buying the "shitty" food then we wouldnt make it. We make "shitty" food because there is a demand for it. If everyone in the US wanted and only bought all natural/no preservatives/fair trade food then the industry would shift toward that direction.

I was premed as an undergrad. Then decided against it and ended up graduating with a BS in biology. Got hired after graduation at a small food company, and decided to get my MS. I recently finished my MS and now have about 3 years including work I did while I was in school. Ill be visiting a client tomorrow to show them new samples I made to see if they like it. If you like food, go for it.

You probably need a degree a food science if you plan to work a big company like that. Your best bet is to go the annual IFT meeting, which is actually in Chicago this year to see if anyone is hiring and do some interviews.

I did the opposite. I went through a Food Science undergrad, did research work in a psychophysics lab and a cereal lab, then decided I didn't like what the industry was doing to American dietary patterns, so I bailed.

Wound up with an MS in Nutrition Science and now I'm in med school.

I do miss working with food, though. I still do a small amount of R&D consulting and teach a class here and there.

I personally think its a gimmick to get consumers to pay more. That being said getting certified organic is a rigorous process so you are likely to be getting a higher quality product which also applies to Kosher.

Natural flavors are flavor composed of numerous chemicals from natural sources. MSG (monosodium glutamate) is not natural but glutamic acid exists naturally and they just stuck sodium on it for better solubility.

Have you seen Fat Head? It was made to show that Supersize Me was manipulate bullshit. A guy eats fast food 3 times a day for a month and ends up healthier in the end by counting calories. It tries to disprove the lipid hypothesis and instead targets the regular joes massive intake of carbs (this plus all the other factors, like lack of excersize etc.) and unhealthy fat - like vegetable oil - as the primary reason people get fat.

Maybe all this is obvious, but I thought it was an interesting watch. It's on Youtube.

Can you determine the chemical composition of food?

For example given a KFC fried chicken, you can isolate each chemicals and you can say what spices it use, quatity of spices used, and how it was cooked. Can you do it?
