So, long story short is that my recently aquired girlfriend only eats free range meat (I need to ask her if this includes eggs and dairy) so she eats a mostly vegetarian diet. Now, I consider myself a pretty good home cook, I can "wing it" in the kitchen with good results every time, bar a few incidents. My problem is that my first step is always to pick a meat and then build the receipe from there, including sides and sauces. I mean, I could do the same thing with eggs/tofu for her, but where's the variety in that?

I suppose my main question is how do I make a vegetarian dish that feels like an entree rather than a collection of sides? Are there certain staple vegetables I need to keep stocked?

I'm posting at work, so I don't have any pictures relating to the topic at hand, so have a picture of my dog in a pink dog snuggie that is one size to small. He hates me.

I have the same sort of diet restriction placed on myself. I still usually start with a protein when meal planning, I just expand the category to inlude tofu, eggs, and legumes, beans, and mushrooms.

Quinoa, lentils, and chickpeas are high in protein and can be made into patties or eaten as is. I also use eggs like a primary protein- make som pasta ith veg, throw a fried egg on top! A portabella cap looks nice when served whole or sliced. Tofu can be tasty is you buy the extra firm stuff, press the added moisture out, and marinate it.

One word of caution with quinoa- soak it for at leas 10 min then rinse it well, or you'll regret it later.

Because she primarily eats a vegetarian diet at home and and thus I want my place to be inviting. Her prefrence is to not eat meat, but she will eat free-range on occasion. Accomidation is part of a relationship, as long as the other party also makes accomidations for you. She more than happily cleans up the kitchen and the rest of my apartment, so I don't think that "apeasing" her diet is too much. She's not telling me to change any of my eating habits, I'm trying to learn how to cook more according to hers. Plus, I like learning new things and skills and this is an area where I lack.

Some people don't eat meat guys. It might be hard to rationalize why, but that doesn't mean that it's any less real of a thing.

An easy option is homemade pizza- I eat meat, but sometimes I'll make vegetarian-friendly pizza without even realising it because there are plenty of delicious veggie toppings. Curry is another good one, chickpeas work really well as the main protein source and you can use most vegetables. Risotto- there are lots of very good vegetarian risottos out there, like mixed mushrooms or asparagus and so on (you can get vegetarian parmesan and use vegetable stock if that's an issue). And pasta, your suggestion sounds good and one of my favourite meals is pasta with roasted butternut squash, sage and goat's cheese.

I'm a vegetarian and I eat mostly pasta dishes. There's 50 million entrees you can make with just pasta, vegetables, and sauce. Also, you should look into hearty soups. Chili, tomato soup, etc. are all awesome entrees (especially if you serve them in bread bowls).

For lunch I have sandwiches. I come from Scandinavia where there's dozens of "open-face sandwich" varieties. You can do cheese & jam, mayo & cucumber, cheese & tomatoes (melted this becomes like a pizza), avocado slices & mushrooms, etc. Combinations are endless.

Breakfast I usually have cereal or oatmeal. I put jam in my cereal, makes it more exciting than eating cardboard. Oatmeal, you can cut up peaches, apples, etc. to put ontop.
