I'm sorry, but I've been broke before. I didn't come from a mommy and daddy signing checks family, and sometimes shit happens. Is the reality in which we live.

I would argue that it's a hell of a lot easier to cook good shit when money is no object. Making meals that you can look forward to when you're broke? That takes some creative thinking.

Food cost really isn't an object for me now, but I'm always happy to give some advice to people that have to live on a very small amount of income. If you've never been in such a situation, you are a fortunate person and you shouldn't look down on those who are less lucky.

Culinary schools don't offer the same experience as working on the job. They're not intended to. I went out of the desire for personal improvement. Could I have gotten the same level of improvement on the job? Sure, but it would've taken me a hell of a lot longer, and working at at least 10 different restaurants to be exposed to the same amount of experience.
Is there a guaranteed return on investment? Hell no. I think most people who go through culinary school waste their education. Usually it seems to either be because they haven't worked in the industry and have no idea what it actually takes and are shocked/discouraged when they finally do get a taste, or because they never had the drive that it takes to be a chef in the sort of places that can actually use the sort of education that the better schools provide. It's not like normal college where people just go to get a degree and a job handed to them, though some schools do offer job placement... once, and in the turntable culinary industry, that isn't worth the cost of hands-on culinary schooling.
All that doesn't mean it is a waste of money. It's only a waste of money if you do not utilize it for yourself.

I don't think it's quite as extreme as a chef not liking fish, but I knew a pastry chef who hated coconut. He was a very good pastry chef, though, and he'd still taste stuff that had coconut in it if he needed to. I think it's one thing to not really enjoy a particular food item, and another thing altogether to not be able to identify the tastes that others do like. I don't enjoy eating insects, but I have, and can appreciate the differing flavors and textures between them and differing preparations.

I am one of those people who doesn't like fish. I remember eating it pretty often as a kid and liking it but one day it was just nope and I've never been able to acquire a taste for it again. When I was in culinary school the instructors always made me try anything with fish (which was bullshit because I was in a pastry program) and no matter what it was I just didn't enjoy it. I never thought anything was gross but it just wasn't good to me.
