Hey ro/ck/stars, welcome to the Second Annual /ck/ Top Master Iron Chef Ultimate Nightmare Kitchen Survivor Challenge!

We are now in elimination rounds. This brings a few changes to the gameplay. The quick and dirty:

-submissions AND voting will be carried out in the same thread.
-we will not be allowing extra days for voting, all votes and entries must be submitted by midnight of the 12th, so try to complete your dish with enough time to attract votes.
-surprise penalties and benefits will be revealed at the end of each round.
-at least one contestant will be eliminated per round, based on a weighted cumulative moving average.

Voting will be carried out in this thread. Please read the voting guidelines below.

Dishes are scored out of a total 20 points, based on 4 categories (worth a maximum of 5 points each); Presentation, Originality, Appeal and Challenge Goals. You may award 0's if you feel the contestant did not meet your expectations for a category.

-Presentation: The appearance of items on the plate; plating skills
-Originality: Creativity in composing the dish
-Appeal: How appetizing the food looks/whether or not the dish appeals to your personal taste as a voter
-Challenge Goals: How closely the entry followed the challenge goal(s)

The distinction between Presentation and Appeal: If someone submits an artfully arranged but burnt steak as an entry, it may score high in Presentation but low in Appeal.

I just want to say that I had a lot of fun making my dish, and that it was a good learning experience; making the stock from scratch, the seasoning sauce, the black garlic oil, the pork, all that stuff made me appreciate what goes into a good bowl of ramen. Fun stuff...

As stated in the OP, participation affected elimination, which is how frgsp made the cut despite placing in the bottom percentile in Round 3. Unfortunately while your last entry had a high score, your entry for round 2 placed in the 70 percentile (70.83%), which was slightly over the median score, and wasn't enough to give you an advantage over people who entered in all three rounds.

I was not a contestant. But I did consider this a real round (and while I didn't find the time to compete, I did follow and judge every round).

I am personally going to judge each contestant on what they contribute. If an anon decides to submit a bullshit, dismissive entry, I will still consider that better than not contributing to a round and then being a sore loser and complaining about it (I'm sorry gaymustardguy, but it's the truth, and it was explained numerous times throughout the competition, regardless of whether or not you had a legitimate reason not to contribute to round 3).

Personally, I would have liked to see the ramen round taken more seriously (I wanted to enter every round, and was excited by the possibility of potentially making it into the finals by making ramen - but it just didn't happen...). In any case, I've judged every round, and have judged them without looking back on their past entries (its up to hearts and dogs to tally up the scores).

I hate ramen, with a passion, but I was really getting into that thread. I would have really enjoyed making some off the wall ramenosoty. It would have been fun. In the spirit of good competition, and so that everyone can do their very best this round, I highly recommend you take a look at Serious Eat's dedicated burger site: A Hamburger Today.

just out of curiosity - are the round themes in any way limited by possible dietary/cultural clashes? ie - we had a fish round, so vegans and strict veggies couldn't really participate if they were serious about ideologies etc.

Is this the same with religious stuff? for instance, jews and muslims don't eat pork, and I think it's hindu's who don't eat beef. Are these meats just as likely to feature as future rounds, or have exceptions been made so these types of dishes are never compulsory?

Your scores for round 2 were: 14, 9, 17, 14, 15, 16. Averaging to 14.17.

That looks delicious, and a lot of work went into the preparation. The burger does look dry. The garlic seems unnecessary in the burger mix, it would overpower the flavor of the lamb. I agree 100%. That said, I really prefer (at least for my situation), being able to judge each entry as they are submitted.

I use the thread watcher and have the opportunity to check in a few times throughout the day, and in my situation it is really a lot easier to judge one or two dishes at a time, rather than having two days to rate everything (which for me ended up rating everything at once and kind of loosing perspective).

In any case, I believe that you shouldn't be rating anything unless you plan on rating everything. That's just my opinion, but I don't understand why you would put the effort in otherwise.

I personally believe that American cheese works perfectly with burgers, because it provides a sort of glue that binds the ingredients together. Most melty cheeses are too wet or too oily to work well in this endeavor.

The thousand island was homemade with mayo, ketchup, dijon mustard, sriracha, and diced pickles. It not only provides spice and tang, but also keeps the bun from soaking up too much burger juice.

This turned out surprisingly well. The sweetness of the red onions complemented the richness of the duck, and the sweet-sour oranges made a perfect dessert. Mug is full of guava and kiwi instant tea which is god tier with anything.

I liked your dishes in the other rounds, was surprised you didn't make it.

I've never actually had duck, but I know it's supposed to be really greasy. That'd probably give the vegetables an interesting taste.

That said, I didn't see any sort of sauce or seasoning. I think you'd need something to balance out the duck. Also, maybe a bit too many onions.

I love duck, and the crispy chicken skin but that isn't what I consider a burger. It is a duck sandwich. It also looks like everything would squish out onto the floor when you bit into it. It would have sold me on being a burger if you had used ground duck. OR cooked the duck as you did and ground the mushrooms and onions and formed them into a patty somehow. I just am not able to call this a burger. Two points for it being on a bun, but I think that is generous. I would eat the fuck out of it especially if it had a buttered toasted bun, some sort greens on it, and maybe some sort of condiment on it (french mustard sauce maybe).

The fact you've got the filling of the burger spilling out isn't very appealing. I would have personally kept the red onion raw too since it's tastier, crunchy which adds good texture, and it looks better in terms of presentation. Duck isn't greasy if you render out the fat before hand. Just prick the skin all over so the fat can drain out from under the skin. The fat has a lot of flavour so I usually save it for cooking other things.

The presentation needs work. Check your backgrounds, the final product looks like a momburger. I like the fact you grilled the burger, but since you used sausage with the meat you had to cook it to death resulting in a well done burger. I will try the sausage though, if I find it. Iceberg lettuce is terrible, it is unattractive and tasteless.
The tomato sauce is gorgeous. The grilling rig it resourceful. The burgers are a nice size, I love the that you mixed the red onions into the meat mixture.

I'm not sure if the actual product is different, but I didn't use Kraft Singles. It was Kraft American cheese in a pre-sliced block, and it didn't come in individual pouches.

To tell you the truth, I had this whole complicated concoction of melted Gruyere mixed with instant-gravy flour and evaporated milk that was supposed to form into meltable cheese. It was then stuffed inside the burger like a Juicy Lucy. Problem is, the combination of Gruyere and burger tasted so awful to me that I had to spit it out, throw out the burger, and say goodbye to an hour of cooking and styling.

A very tasty and popular Carolina treat with the addition of the slaw directly on the bun (which is perfectly in proportion with the sandwich and the sesame seeds work really well with a bbq pork sandwich, also it is a good quality bun so I have no problem with it). Ramson is also called wild garlic. You can eat the whole plant but it's mainly the leaves which have a mild garlicy/grassy taste. So a mild aioli with a hint of grass.

I'm not trying to nit pick or anything, but really just want more info on what we're looking at, in lieu of a vertical. In any case, it looks good (although I'm sure some people will vote you down just because you made a veggie burger...).

Also, someone uploaded a basic vertical tutorial (using gimp, which is free), in one of the last rounds. I don't have it, but if you are putting in the time to compete in the final rounds, you might want to see if someone can locate it for you, and spend a few minutes figuring it out... It isn't that difficult, and would really help you out (and benefit us), imho.

Hey, happy to provide more info.

The burger is:
2 small kumara (New Zealands version of sweet potato)
2 small carrots
1/2 onion,
1/2 capsicum (bell pepper)
1/2 c spinach
2 c cooked chickpeas (garbanzo beans)
2 tbsp tahini
1c cooked quinoa
1 tsp salt
1 tsp cumin
1 egg yolk

You cook off the onion, carrot and capsicum, blend with the spinach + remove to a bowl, blend the chick peas and tahini and add to the bowl along with the quinoa, salt, cumin and egg white. Shape into patties and lightly flour. Fry in oil until brown then finish in the oven for 15 minutes.

I made the brioche - it is not strictly a brioche dough, but instead just a soft dough enriched with eggs, butter and sugar.

The goats cheese spread was simply goats cheese cut with cream cheese - in New Zealand chevre runs at about $9 for 200g and I didn't want to use it all!

Capsicum is the same as bell pepper, I had it left from the patty so decided to throw it on there as more of an after thought, it was soft but not grilled black.

Next time I will do a vertical, thankfully this time it wasn't required.

Desert burger!

The bun is a giant French macaron (vanilla flavored). The patty is chocolate ice cream. The ketchup is a raspberry and port coulis. The mayo is yogurt whipped with honey and orange blossom water.

The presentation is pretty lame and uninteresting. The burger components are chunky and thick like a Momburger, the cheese is blobbing out on the sides. There is a glob of something on the top of the bun. The colors are nice the, burger looks appetizing. The plate is nice and clean, albeit stark. The cross section is nice, despite the shadow. The ingredients sound perfect together. I want to eat this, if the bun was buttered and toasted. I love portabellas and onion jam, the chickpea burger is just a bonus. I love the red leaf lettuce, points for that.

Looks pretty pale and flat, visually could have benefited with a puffier "bun" ( I know it was hard to do though), maybe some additional ingredients inside the burger for esthetics. This sounds amazing though. I love the concept, it could be sightly less ice cream sandwich and more burgerish.

The coulis looks amazing, I'd drink that straight up. It would look more burgerlike if the patty had more height, but I guess that's difficult to achieve. It looks exactly like the one time I tried to make macarons and got greedy and made big macaron blobs and they ended up flat and cookie like.

I'm gonna go along with what others said about how the macaron shouldn't be so much larger than the ice cream, but that's not too big of a deal. Looks absolutely delicious, especially the dipping sauces. I'd probably end up drizzling the raspberry one all over it. Well done

I think the ramen round really fucked up this competition. People making "dessert ramen", so now each round some joker is going to try some Heston Blumenthal shit where you make a dessert that looks like a main.

To me, if the competition asks for "burgers" then you have to cook something that you could order from a restaurant menu as a burger. You couldn't put an ice cream on a menu and sell it as a burger then just pull le troll face when people sent it back.

While I'm not a contestant, I disagree. I think that people who wanted to compete competed, and ramen had nothing to do with it. If anything, it was Easter (for those who are obligated to celebrate it) that fucked it up.

On the one hand, nobody here has done anything close to the level of Blumenthal.

On the other hand, there is absolutely nothing wrong with someone taking a theme as general as a "burger" and making dessert. If anything, that should warrant extra points on creativity. If you've ever actually gone out to eat you would realize that making something like a "dessert burger" is pretty common practice these days.

And guess what? If you ordered a burger off the dessert menu and then sent it back you would be the one at fault. Why on Earth would you order a "burger' off the dessert menu and expect anything other than a dessert? Do you speak any language other than potato?
