Rare steaks have a lot of flavor but aren't warm enough for my liking. Medium-rare is the perfect spot for steaks for me. Well done kills all the flavor and makes it tough to eat, takes all the joy out of eating a steak.

It's often used as a thickener in sauces and braises.

The idea is that beef fiber becomes dense, tough and too chewy when cooked past a certain temperature. The steak also loses a lot of its moisture.

As other already said there is very little to no blood at all in steaks, since blood is drained right after the animal got slaugthered.

Still blood is consumed in several dishes like blood sausage, and pressed duck ( canard au sang).

Pressed duck starting with a duck whom has been strangled to retain all of its blood.
Then the duck is roast whole, liver, legs and breast are cut off the carcass once roast, and prepared.
This carcass is then pressed (using a silver press to avoid oxydation) to obtain all the blood and juices from the tasty bird.
These liquids are then flambé with different alcohol and poured still hot over the meat.

The perfect steak should be juicy, tender, and will melt in your mouth without feeling like mush.
Undercooking leaves a stringy, tough mess that is disgusting to chew through. Overcooking creates a dry, flavourless slab of leather.

The exact degree of perfect doneness depends a lot on the meat in question. You will know it when you taste it. I generally order rare and receive anything from rare to medium.

I will say that in general, undercooking is a greater evil than overcooking. Most people will just sigh and eat a well done or even burnt steak. Almost nobody will be willing to eat a slab of raw meat.
