Is /ck/ to elitist to discuss buffalo wings?

Best methods of making wings? Best restaurants / bar chains to get wings? Preferred sauce type? How do you cook your wings? Boneless vs bone-in?

I like to deep fry mine. I just dump a jar of Frank's Buffalo into a pot and add a stick of butter, and add some basil. I coat wings in some egg then roll it in flower that I've added some simple seasonings to: mostly paprika, oregano, more basil, and a touch of onion powder. I prefer to deep fry it in vegetable oil, but sometimes I'll just use a simple stock like Crisco.

Curious to see how /ck/ prepares wings.

Sauce: 1 part butter, 1 part your favorite hot sauce and spices. You can experiment with the ratios, less butter for hotter wings, but that's the basic recipe.

while I like traditional, fried wings just fine, I've got a system that produces godly wings. Smoke them first, over applewood, then toss with some sauce, bake, then toss with the sauce again. That first layer of sauce that bakes on is important to the deep flavor, and combined with the smoking is glorious. Man, now I want to make some this weekend.

I don't do wings anymore because I've already eaten a lifetime's worth of them. But I went to college in upstate NY, and learned to make them at the Anchor Bar in Buffalo. At my frat house we had a deep fryer, so it was easy. You could dump the frozen wings right into it (or at least we did - we were usually drunk when we made them).

The sauce is a 50-50 mix of Frank's Red Hot and melted margarine. That's how they did the hot ones at the Anchor.

Just a warning OP, You can make halfway decent wings by putting them in the oven or pan frying them but you will only ever make good wings by deep frying them. Pan fried should only be used when you want them quickly, oven fried should only be used when you're being lazy.

Boneless is terrible, and while buffalo wings are good I've found that pretty much every other sauce is better. I like making orange sauce and ginger soy wings. Coke wings are what I make when Im being lazy. My favorite variety is hawaiian but I have yet to find a recipe that taste anything like Wing Stops Hawaiian. All my attempts have been too sweet and taste nothing like their version

Where I work we use smokers, proper big industrial ones that we cook around 1.5-2kg ribs in every day.
But the thing is that they are not always in use or more often than not ..full so we ask to put stuff in there.
I've bought stuff from the butcher and they've let me smoke it.
I've smoked brisket flat and made burnt ends that lasted me for 4 days. ribeyes which smoked well done but got that pinkness around the outside (I called it smoked rare) and chicken wings which smoke til cooked in around 3 hours but it's better to finish them off in the oven to crisp the outside up.

I should have specified deep fry. I'd never chance frying them on a pan, seems like a grease fire waiting to happen. I'm not very partial to sweet sauces and the like. If I want wings I want buffalo, although I do BBQ from time to time.

Perfect wings:

Oven preheated to 375, left sit for 5-10 min once temp is reached. Bake for 60 min on a slightly greased aluminum sheet lined baking tray.

Have a good convection oven, then 20-30 min covered, final cooking time uncovered.
No convection oven, then the full 60 min uncovered.
Want them crispier, once done cooking, broil at 400, checking every few min to prevent drying out.

Place in bowel. Pour over favorite sauce. Toss. Serve.

The other way is like ribs, low and slow (250-275) for 2-3 hours, with your favorite sauce in the baking dish from the start so that it caramelizes over the wings.

I'v tried to make wings several times now, and they're still delicious, but most of the sauce just ends up on the side with a pool of oil floating to the top after a minute. Already tried honey as a natural emulsifier.

Oh, you fry the wings/boneless chicken first. Use whatever you like. Cornstarch, eggs, flour, who cares. Then you take the plain wings and a bowl. Bottom of the bowl is the hot sauce or whatever. Mix until you get a nice coating. The oil from the deep fry is enough, so you don't need extra butter, but some call for mixing hot sauce with butter.
