So I'm getting myself two rabbits tomorrow. I'm going to skin and butcher them. This is my first time butchering any animal.
Any tips/recipes/past experiences?

I want to roast the first one whole. The second I might freeze bad use in a stew.

>> No.5029102

Rabbit ribs are fucking incredible. Make sure your butcher gives you the head, it's super useful for making sauce with, plus you can crack it open afterwards and eat the brains. Phenomenal on a baguette with pickled radish, aoli, bird chilis, and cilantro.

>> No.5029109

Boney, tough, gamey nightmare.

Debone everything and braise the flesh. Roasting is just going to make it worse.

I managed my first time. I did it in a bathtub, on my own, and was absolutely terrified I'd mess it up the whole time. Came out fine.
>if ya know what I mean

But, no, seriously. I was 21, I'd gotten a little drunk and accepted a rabbit from a friend who had broken up with his girlfriend and was moving out. I had it for about two weeks before realizing how terrible of an idea it was, and opted to butcher it and eat it versus paying the shelter $20 to take it (because anything that's not a dog or cat they classify as "unadoptable")

>> No.5029647

Just to clarify braising is Pan searing the meat and then putting it in a crock pot? Wikipedia was kind of vague.

These are free Craigslist bunnies.

>> No.5029653

>>5029647

That's an example. Braising is simply cooking in liquid for a long time at a low heat. That's the extent of the definition. It is very good advice to brown the meat first--that adds a lot of flavor--but if you want to be anal about the terminology that's not part of the "braising" process.

Also it doesn't require a crock pot, you can do it on a pot on the stove or in the oven as well. A crock pot is simply a single-purpose device which does braises. Sort of like how a toaster makes toast and a rice cooker cooks rice but you can make toast without a toaster and you can cook rice without a rice cooker. Those appliances aren't strictly needed, but they are convenient.

I wouldn't. I don't know if pet rabbits are much different from game rabbits but the latter really use their muscles so long slow stewing is the order of the day.

>>5029657
>Any ideas what to do with the pelt?
The paws can be cut off whole as charms.

The rest you can brain-tan if you wanted (you will need more brains than the animal naturally has for best results). You could also dehair it & make rawhide or similar.

>The skull I just want to bleach in the sun.
Boil first to remove flesh (think making stock). After defleshing boil again with a little detergent in the water.

Alternatively just bury in the garden for about a month, then clean it off and let the sun do its work.

The domesticated rabbit I was told has a higher fat content because of their sedentary lifestyle. I will still do a stew. I will post pictures after everything is said and done. Do you guys want pics of the whole process? Or do you just want post-butcher pics?

I am going to kill them myself. I was thinking a good whack to the back of the head would do the trick.

FYI I live with a vegan, a vegitarian, and my girlfriend who lives with us it totally squeamish, and doesn't want to think about the fact that animals are harmed in the making of meat. None of them know my plans. I imagine there is going to be quite the protest at my house.

Don't punch the thing in the back of the head, or carve it up alive, OP.

With a rabbit, what you want to do is hyperextend its neck and then twist. Hold it down against a table by pressing against its back, gently but firmly, and then put your other hand underneath and around its neck. Pull forward and up, then twist.

Look up any of the various survival forums for how best to skin and clean them.

Looks pretty legit for your first time. How did it feel when you took the lives of the animals? Most people don't have the stomach for it; especially if they were pets.

If you have questions about butchering in general, I'll help you out if I can.

Again, not bad for your first time. I find that most people have the most difficult time skinning and not puncturing the stomach and other internals of animals. In addition, sometimes removing the anus and the connective tract can be a difficult conundrum for some… Anyway, the meat looks healthy, though a little small as far as the white rabbit is concerned.

Don't boil the skull too vigorously if you want the skull to be high-quality. Boiling can crack the skull, cause teeth to fall out, and otherwise make it less sturdy. If you want a high-quality product, you can check out some simple amateur guides online, but you basically wanna do the following:

1) Remove as much flesh as possible prior to cooking (including eyes, tongue, and jaw/cheek muscles)

2) Cook briefly (try to use water that's just under boiling temperature)

3) Remove some more flesh

An easy method from here is to place the skull in a container of water and let it sit outside for a few weeks or longer. Just make sure no wild animals can get to it. After a few weeks, you just wrinkle up your nose (it will smell very, very bad). and rinse it off. Any remaining flesh should just slough off. The brain may need to be scooped out, though.

If you want a nice white color to it, don't use bleach. Use hydrogen peroxide and supervise the bleaching. Once it gets to the right color, take it out - don't just let it sit in the peroxide overnight or anything. Then, let it sit in the sun for a day or three to dry it. It should be a lovely color and have no odor.

The anus can be tricky to remove, it gets easier over time. There's a few ways people will tell you to remove it. I usually do take the tail off though. The best way to be 'thankful' to the rabbit is to honor its sacrifice (death) by utilizing every scrap of it possible. Use the pelt for something, use the bones, etc.

>>5031576
I don't really feel uncomfortable doing it so long as I am able to utilize the animal to its full extent. Wasted product means that the animal has been dishonored in the sacrifice of its life. Butchering isn't about the "slaughter of innocent animals" as it is providing food for a meal. In the times of old, a butcher would make sure to use every scrap to make sure that the animal's life was not taken in vain, and that the animal would be used properly for survival of those who needed it. Modern butchering is a little different… but honoring the life of the animal (using it to the fullest) is still important.

The intellect of the animal should play no role in your job while processing it. The real problem is when you look them in the eye and see the terror (if you didn't calm them first) or if you have a name associated with the animal. These give it a sense of 'higher being' as some call it- and it makes it very difficult to process them because of your attachment for the animal.

Also, let this be a lesson to anybody that may have to re-home an animal. Never post "free to a good home" on craigslist. I'm sorry this became a shit slinging fest. YesI should have kept my mouth shut regarding the origin. Then this thread would not have been clogged with protest.
I did not lie to the woman out of Shame. I lie to her for two reasons. A. She might not have given me the animals otherwise. B. to give the woman peace of mind.
If someone you cared about died a prolonged death, you don't want to hear about their suffering. You want to doctors to lie to you and tell them that they didn't suffer.

I just need to buy a gun and go hunting just so I can avoid this hypocritical bitch fest. From my woman and from the people acting like women on this board.

Today I will try round two with pic related sans the ham. I want to taste the rabbit this time and not confuse it with flavors of other meat. Thanks to the anon who suggested this recipe.

put the skull into an anthill, those little fuckers will clean it for you perfectly.

As for the skinning, my grandfathers technique was to nail back legs onto an old wooden door, make circular cuts around ankles, then length wise cuts along the legs, these cuts met on belly and fused into one long cut all the way through the torso. Then he'd peel the skin and cut the head off (he removed the head from the rest of the pelt later, pelts were sold and the heads were given to his dog, who munched on them for the rest of the day). Also, don't make the cuts too deep, you want to cut just the skin, not the flesh underneath.
Then he'd cut the abdomen, take out the innards and throw all of them to feed the chicken (im not sure about colon, but I think the chickens ate it too). Basically there is only one thing that you must be wary of: do NOT damage the gall bladder. If you do, it will spill over the meat and the contaminated area is practically ruined, because it will be incredibly bitter and disgusting. Also, gall bladder is the only thing that you can't feed to animals, they either won't eat it or they will get really sick. I used to watch grandpa butcher rabbits my whole childhood, I miss him

oh yeah, his killing technique was a smack in the back of the head with edge of his palm, that would stun the rabbit, then cut his throat and let him bleed. He was holding the rabbit by it's back feet, so he could put strength into the blow and the rabbit would bleed out faster too

Thought this board was about cooking -.-

I used to have pet rabbits when I was a kid. I startet off with two of them and everytime we had to many, they were butchered. (up to like 15 at times)
Most of the rabbits had names and we played with them too.
