Like, you take some healthy apples, but then you soften them up in bacon and mix it with fried onions and sugar, serving it with even more bacon.

I had a Danish chef. He made something like that, called it krydderfedt.

It was apples, onion and pumpernickel fried for like an hour in lard and duck fat. Then he congealed the entire thing and used it as a spread. We usually put it on pumpernickel and served it with radish and rygeost, a fresh cow's milk cheese coated with caraway and hay-smoked for literally sixty seconds.

Mandelmassa is essential for making a good semla.

2 1/2 dl sweet almonds
2 1/3-3 dl icing sugar
1/2 egg-white
2 bitter almonds
2 tea spoons water

Mandelmassa: Scold and peel the almonds. ground the almond finely. Put in a bowl. Add sugar and egg-white. Add the bitter almond and some water to make a nice consistency.
You could use bitter almond aroma instead of whole bitter almonds.

I use cream instead of water.

For the buns, just make some regular white buns, but put cardamom in the dough.

It's quite simply cod in a sauce made with garlic, chilli pepper and olive oil.
