I worked at one of those Mexican restaurants back in the day.

You know, the kind that did "tableside" guac. Humiliating and awkward half the time, sometimes fun if you had hot chicks or kids who could "help" (read: do it for you) you make the guac.

It was pretty good though, and basic:

No. Ripe avocado is enough fat. Lime juice does the rest. If you want to add something beyond lime, salt, red onion and cilantro add some chopped jalapeno. Nothing else.

Diced red onion (soak it a bit to weaken it's strength)
Little bit of chilli, hot sauce.

Vary your salt content depending with what our eating it with. So with salted nachos put less but for other things add more.

Here's my recipe and most people tell me it's the best they've ever had:


Three hass avocados, seed and skin removed

1-2 roma tomatoes, seeds removed, cut into cubes

2-3 cloves of garlic, dependent on how much you like garlic

2 limes, juiced, add lime juice til you can taste it but it's not overpowering.

Cilantro, mince the leaves specifically and add in around a tablespoon. Again, entirely dependent on your taste buds.

Around 1 half of a white onion, chopped. I usually use less, too much onion really fucks the dish. Again, add until it has a decent consistency but doesn't overpower as a flavor.

Salt - I can't stress how important it is to use kosher salt in this dish. I usually add around 1/4 teaspoon of salt, possibly less.

Don't go for overpowering flavors, make sure everything is fresh. You want a balance.

This is just simple guacamole, everything else is only making it pretty, so if you have guacamole and add pico de gallo which is tomato, onion, chile all diced thin and dressed with lemon juice you have a guacamole with some fresh sauce. If you add some other cooked sauce it's a different sort of guacamole sauce and you could make it blended smooth with cream and flavors like in monterrey.
It's really a very plastic recipe which should compliment your dish.

3 Ripe Avocados

1 head of garlic ( Can change to preference)

1/4 Red Onion Chopped to preference

Chilies varying on heat preference
I use ( 3 Serrano , 2 Jalepenos , 1 Poblano, 2 Tbps of El Yucateco Habanero Salsa Verde)

Herbs to taste:
Cilantro , Mint

Spices to taste:
Salt, Pepper, Cumin Powder, mexican oregano, ancho chili powder and a dash of white wine vinegar + a full lime with zest

In a pot I roast the peeled garlic and chili peppers with a tsp of oil on med high heat until garlic is browned and peppers are charred and skin is blistered.

Add Spices + Vinegar & Lime to the mixture and transfer to pestle & mortar or food processer depending on what you have, and blitz the mixture imulsifying with olive oil as needed.

Add Avocados and Onion and incorporate them into the above mixture of garlic chilis and spices.

Finish by adding the herbs and mixing one last time.

Chill in fridge for 30-40 mins and serve.

Here's a recipe that works really well for me. It can be scaled up or down if you need to make more or a little less. These amount usually fit well as a side dip for 4 people.
>3 avocados
>3 cloves of garlic; mashed, not chopped
>juice of half a lime
>half a table spoon chili powder
>about a full tablespoon of jalapeno sauce(La Victoria makes a good one)
These last two are if you want to add a touch of spice to the guac.

>1 decent size tomato, coarsely diced
>and a decent amount of salt to taste
>also bit of chopped cilantro if you like

Toss the all but the onion and tomato into a bowl and use a fork to mass the avocados. This gives better control over the chunkiness of the final product than something like a potato masher does. Once you get it just before the consistency of your choice, toss in the onions and mash together until you're at your desired consistency. Stir in the tomatoes and start dipping chips.
Taste it regularly to see if it needs a touch more salt.
