-Presentation: The appearance of items on the plate; plating skills
-Originality: Creativity in composing the dish

I've gotten lucky and had a lot of the ingredients I've worked with in the house already the last 3 weeks especially and have gotten very very lucky making up shit that seems to work well together with a limited budget... I can usually think of ways to use ingredients from previous rounds too, like the cotija cheese and what not.. anyway ramble ramble..

Ok, I made profiteroles three ways...

On the far left is a coffee pastry cream filled puff with dark chocolate ganache, the middle is a traditional whipped cream and powdered sugar, and the right is a chipotle-caramel arugula mango filling with a "molassses caramel" sauce...

My mom says "WOW, those are SO good", typical mom :)

OH and I already had the chocolate, the chipotles in adobo, the flour, sugar, eggs, and basically everything besides the heavy cream and mangoes... I ended up buying flour cause I thought I was out but I didn't need it. So yeah, I made this from almost entirely ingredients I already had and spent 8 bucks at the store!

Just shows that you can do a lot with what you have on hand, you don't have to spend a ton of money...

Thank all of you so much, seriously, you brightened my day! It means so much to read your comments :)

All of them were really very good! The mango had a super interesting flavor profile, smoky from the chipotle and the molasses caramel worked perfect with it.

None of them were overly sweet, I'm not super into really sweet foods so I made stuff I thought I would enjoy, and they all turned out yummy. None of the three were overly sweet. Gonna have a coffee cream one with my lunch today :)

"Moroccan" Stuffed Pork with Cider Sauce and Carrot, Parsnip and Asparagus Faggots.

Stuffing is Date, Apricot, Fig and Raisin, Almond, Pine Nuts, Pistachio and Pumpkin Seed with Ras-el-Nout.
Sauce is reduced Apple juice, Cider, (Lambig), Rice vinegar, Soy sauce, Honey, Cinnamon, and Ginger

I usually mix my spices myself, but here I mixed two store-bought Ras-el-nout. Ingredients :
Black pepper, Garlic, Ginger, Mustard seeds, Cinnamon (10%), Nutmeg, Chili, Paprika (5%), Clove
Coriander/cilantro, Bay leaves, Tumeric, Fenugreek, Caraway , Cumin

I mixed up recipes to make this one and only realise Moroccans probably don't eat much pork halfway cooking...

Strawberry-Chambord Cream Cake
Lemon Cheesecake with Lemon Curd

A little explanation: I made 2 desserts, because one is for a party I'm going to tomorrow, and one was for today, because my housemate's relatives are visiting. So, only the Strawberry-Chambord Cream Cake is cut, because I can't cut the Lemon Cheesecake until tomorrow. BUT, I will take a picture of a slice when we cut into it at the party tomorrow and post it then.

Lemon Cheesecake with Lemon Curd


The top is so yellow because I added a little bit of yellow food coloring to the lemon curd for the top, because I wanted it to be a daffodil yellow, you know, for Easter. The lemon curd layer in the middle is a lighter yellow color.

Haha! Cool. She's a mutt I adopted. She and her siblings were found in a sack under a cattle guard. :( But she's super smart, and hilarious. You can't really see it in that pic, but she has a mohawk of silver hair that goes from the top of her head down to her neck that connects to her "mane". She's my compadre. I have a cat too (which is who I took my moniker from), and they get along okay, my dog loves the cat and wants to be his friend, but the cat hates the dog and will smack her in face every chance he gets (he's a grumpy old bastard).

Holy shit, yeah, that's too bad, I'd love to breed more of these guys. She's the best dog I've ever had. Sweet, loves everyone, smart as a whip, and funny. She talks to me in little growls and snorts, it's hilarious. She micro-manages everyone in the house too. She'll come tell me when the cat wants to go out or come in, tells me when he needs food, tells me when my housemate is awake or coming in the house, tells me when I need to get up, etc.

Normally his face hair is longer, but he had a trim.

Also I tried to make a lemon meringue pie for the first time but it turned out awful. The only good part was the crust (used vodka mixed with water instead of just water when making the crust, you should all do this)

I really wish I knew what mix of breeds she is (or your dog, too, for that matter). I had to have her breed certified by the vet when I moved into my place (because they would only allow certain breeds), and even the vet was like "She could be nearly anything. We'll just put down Lab mix, since that's generic enough to allow her in." They said for $100 I could have her DNA tested, but I'm not that desperate to know, lol.

Okay, I promised a pic of the cut lemon curd cheesecake, and this is as good as a pic as I could get in a room full of people, lol. It turned out great, super creamy and tangy, not too sweet. I would definitely recommend this to anyone who loves citrus and not-so-sweet desserts. I didn't have any left to bring home, otherwise I would have tried to get a better pic.

LOL. It's really good. If you like those kinds of desserts, I highly recommend it. And, if you don't want to use the Chambord, you could use another liqueur or brandy or even a flavor syrup, like hazelnut or something. Yeah, my housemates relatives were (playfully) arguing over who got the last piece this morning, heheh. (They shared it, :) It is better when it's first made though, so if anyone want to make it, you can make all the components ahead of time, but don't assemble it until you're ready to eat it, because as it sits overnight, the cake will absorb the filling pretty well. The cake can be made ahead of time, and once it's completely cooled, can be wrapped tightly in plastic wrap until you're ready to use it (or even frozen, this sponge freezes well).

I had to make two desserts anyway, for the holiday weekend, so why not show both? People didn't have to vote on both of them, and I think most people who did vote on mine preferred either one or the other.
