I cook my ramen in an obscure IPA that you've probably never even heard of and I throw away the flavor packet and don't bother to read the instructions on the packet because I don't need the man telling me what to do.

I like to drain them completely and then add some peanut sauce instead of the seasoning packet.

Dashi/miso would be the most traditional way. I just use regular meat broth, when I get a couple ham hocks or some chicken carcasses I boil them down in the pressure cooker, cool the stock, skim the fat, then warm it back up and pour it into ice cube trays.
