I have used cider for deglazing before, it works fine. But, the apple flavor in cider is quite weak compared to the taste of bourbon. If he wants an apple flavor in that sauce he's going to need a stronger flavor than using just cider alone. Sorry, perhaps I wasn't clear. Bourbon has a strong flavor so it makes sense that you can taste it in the finished dish. However the apple flavor of cider is nowhere near that strong. If the other guy simply swapped the weaker-flavored cider for the strongly-flavored bourbon that you used I wouldn't expect that he could taste it in the finished dish. Cider has too weak of a flavor compared to bourbon.

On the other hand, if he used a stronger apple flavor (like your apple brandy suggestion) and/or added some apples to it then it would work fine.

A few spoonfuls of apple butter in your sauce might be best. Even in apple cider vinegar, the apple flavor is minimal. Calvados, imho, in recipes I use it for (mostly deglazing some pork chops) is delicious for the other elements, and barely for the apple flavor.

It'd advisable...sure...if you want...if you want to spend the money...and can store it out of the elements when not in use...

But, if you already own a grill? Propane or weber style charcoal? You can get a smoker box and achieve the kind of results you want for flavor. If you are attempting to smoke your entire catch of fish from a day on the Bay or a salmon season...as a way of "preserving" by smoking...you probably want and need something specific in the cold smoking range. To each their own uses, you know?

On my propane grill, I use a smoker box, and alternate between chips from oak, mesquite, applewood, or all three. I buy the chips for $5 bag, at Home Depot, and barely make a dent it when you only smoke your meat the first 20 mins? You're probably done fast when you aren't doing some brisket or a slow roast of some sort.
