personally carp à l'ancienne, quail galantine, souffle of capon, homard à la parisienne, basically finessed french classics, as for an ingredient, things which have a short shelf life are bastards for service, avocados, macoun apples, uni, roquefort. It depends on your skill, the ingredients availability, i think cooking huge cuts of meat like suckling pig or a steamship are hard to get dead on, many say bernaise which i think is easy, it's subjective
