I went to WCI back in '99 right after high school, but my real education was in kitchens. It does pay to have that to fall back on though. I don't cook any more, so I can just give it to you straight. I worked at Spiaggia in Chicago, a 1 Michelin-starred Italian restaurant. We had this ridiculous wagyu from the top prefecture in Kobe. $140 dollar steak or whatever, 6 or 8 oz portion. Anyway, some fuckass sends their plate back. It wasn't the temperature, it wasn't the seasoning-- no, it was that the beef was too fatty.

It's anecdotal, but I've worked with CIA graduates who were failures as cooks and have seen failure restaurants opened by CIA graduates.
I think that a savvy restauranteur knows this when hiring a chef. Sure the certificate looks good, but after all, you did just pay for it.
FC and menu planning is something that is learned fairly easily on the fly. It's also relative to your clientele. That is to say, you can plan a 5* menu and run it at a 20% FC, but are you going to be able to sell it? Are you going to fill tables?
And if you want to pair wines you're best off spending the money on wines instead of a class. But that's just my opinion.

Yeah, its all about parasites. US meat is usually parasite free because the way the animals are handled they never get exposed to sources of infection. Pigs arent allowed to rut for grass or eat their own waste so they dont get trichinosis (which means most US pork can be eaten rare/medium rare, I just cant bring myself to do it thanks to how my parents raised me). Beef and chicken can be eaten rare, although whole chicken would be slightly different as the blood it sits in combined with the hollow bones could theoretically allow for bacteria to suffuse the meat. The problem is that people dont realize this, so every time its undercooked they psyche themselves into getting sick. Sadly, I find medium rare chicken to be delicious, the problem is I always psych myself out when I eat it because of "muh food poisoning".
