You gotta eat around. There's no hard and fast and I wouldn't trust anybody's opinion but your own. Even the most knowledgeable sushi conessiers no jack all about it and as such seeing reviews online mean jack all (if someone praises the fish for being especially fresh it's a dead giveaway that they know absolutely nothing).

The best sushi I've ever had comes from a place, a little hole in the wall, that mainly does business doing deliveries. I'm usually the only person in there when I go even though they have a pretty big sushi bar. The worst I've ever had was from a chinese buffet, and even that wasn't pukingly bad, it was just steamed veggies in the wrong kind of rice left sitting out too long.

In short, try new places 'till you find one you like. Go for places that, generally, cook other good food as well. The place where I've had the best sushi also has the best pot stickers, fried rice, and miso soup I've ever had.

It's hard to say really. When people say sushi doesn't have much flavor they're not lying. A peice of sushi has less intense flavor than, say, a chile pepper or smoked meat or pickled anything. But it's really about the subtlety, the intricacies of the flavors. A good peice of fatty tuna is like a good olive oil. It's savory and subtle, something that gets you on a chemical level more so than a taste you can describe. It's also about how the flavors interact. The rice has a light vinegaryness to it and for whatever reason this brings out something close to sweetness in fish. And more than anything it's about texture. Nothing is better than sushi in that department. Sushi is magical in a way. A good piece should be firm, solid, well built, but the moment you put it into your mouth it just melts away.

It's truly an eating experience unlike any other. Too subtle to be properly described.

This. If you're a sushi novice with high expectations you can be easily disappointed, because you're going out for an expensive meal expecting to be wowed, and if the place is really good the experience will be a subtle one.

How do you deal with this?

You can always just order a beer and a bunch of American style rolls. These are designed to appeal to Western tastes. If you want something closer to a traditional sushi experience, have deeps pockets and KNOW you can trust the fish do this: Sit at the bar. Order a bunch of nigiri. Get a variety - some light tasting ones, as well as some fatty ones. Do not bother with soy sauce or wasabi. Don't even bother with chopsticks. Start with the less fatty nigiri, popping each piece into your mouth whole. (Lean your head back a little while you do this). Many prefer to put fish side down, so that hits your tongue first. End with the fattier fish.

If you have serious money to blow, and are completely sure you can trust the chef just order omakase. This means you will get the best he has to offer that day. You will also pay dearly for this, so if you're not sure sushi is your thing, and/or you're less than certain the chef is properly qualified this might not be the option for you.

It can take a while to get used to raw fish. I felt a little off the first half dozen times I ate sushi, and it was good stuff. If you only puked once, it was probably psychosomatic or just general stomach sensitivity.

There are ways to sort good sushi from bad. The rice should pearlesce, the nori should not be chewy, the fish should have delicate (and at times perfume-ish) qualities. The rice should not be packed tightly, and a decent itamae should be balancing the wasabi under nigiri to suit the fish... or maybe just using a little shiso leaf. If you're in a god-tier place, you won't get a bottle of soy; they'll brush nikiri on themselves.

If you're eating off a conveyor belt, floating boats or its all you can eat, you're not eating great stuff.

Tuesday and Wednesday tend to be FUCKING HORRIBLE days to eat seafood, especially sushi. Tuesday is the fishmonger's backlog from over the weekend being served up; Friday's fish. Wednesday might be a fresh order, but most restaurants don't get the turnover. Unless I'm within a few hours of the coast, I only eat sushi of quality on Friday or Saturday. I have an iron gut, and I've scoped my local sushi places, so I'll eat on Tuesday for the cheap stuff.

The best sushi places in London are in the West End and are small hole-in-the-wall type places run by a small group of Japanese people.

Signs of a good sushi restaurant:
1. Sushi being prepared to order in at least partial view of the seating area
2. Japanese sushi chefs
3. Small menu
4. Good conveyor belt places are few and far between but there is a gem tucked down an alley near Liverpool St. station

First time we tried going to this restaurant, it was in a really really really black neighborhood.

Then we found the same restaurant in a more white community so we were like yeah nig nogs let's eat there.

The Maki didn't impress me (I'm not a fan of it anyways) and they dont' have roe nigiri (instead, it was on slices of cucumber?) but the Nigiri was amazing.

typical fare: Tuna, Salmon, Yellowtail and Halibut, along with the Amaebi like described. I think there was also Octopus?

There was also Unagi but it was only in the Maki, which disappointed me, but not as much as the fact that it was the Maki smothered in that weird sauce.

Good luck finding a real itamae outside of Japan. 10 years+ to become 一人前 in Japan, another 5 years to learn the local market after moving out of Japan, and 5 more to open your own place.

Not for edomae sushi. If you ask for unagi outside of kaiten places in Tokyo, they will laugh at you.

It is true that unagi is used in Kansai (oshizushi), but most people outside of Japan do not eat oshizushi, they eat edomae.

Why not make Eel Rice aka Unagi Rice?

Get some precooked unagi package which is enough for 1 to 2 people. Buy more if more people are attending a party for your sister. (You can ask them to pay you cash for party supplies and in return you are making party food for them). And making eel rice is pretty easy when you buy those precooked eels.

Next, find a reputable fish vendor or an Asian market or google where to buy Sashimi grade fish in your area.

Salmon is usually the cheapest sashimi compared to the others.

You can buy other types of sashimi but I find salmon to be more practical for taking it back to your home kitchen.

Then, depending on how big your sister's party is, cut up or have someone cut your 1 to 3 or more pound of salmon sashimi and serve with ginger and diced daikon along with your eel rice.

Or you can use your raw salmon to make salmon rolls.

Just get some cucumbers, avocadoes, and raw salmon and make multiple sushi rolls with them.

You can buy those tiny fish eggs to sprinkle over your rolls to make them look orange.

Most sushi restaurants around here are run by the koreans or the chinese, there's only one that's "authentic"

Also some of the places around here tend to have names that aren even japanese.

One place is smack dab in the middle of a shitty town and wreathed by a kentucky fried chicken and a burger king. I went there and it was mediocre. Another is in a plaza right next to a grocery store. They suck so hard. despite just opening a few months ago. The grocery store has better sushi.

There's a frou frou place that has good fish, but their plating always goes ham to hell and back. Plus their portions are way too small for the price. Ordered an unagi don last time I went and it wasn't even in a bowl.

Nothing is puke level here. But there is just a lot of mediocrity. The best one is like an hour from my house. so it's only for really good occasions.

It's an acquired taste. Tried it first in 2008 and spit it out. Tried it a few more times in college and began to like it (although honestly, I only ate crab or cooked fish sushi). Fast foward a few years, I ate so much sushi in 2012 that I still get queasy at the thought of it now, 2 years later. I'm pretty much done with sushi.
