My cousins GF is coming up this year for xmas and she's vegan. I feel weird though since we're all carnivores.

It varies by vegan. Some refuse to eat anything remotely associated with the animal Kingdom, some eat things that have no central nervous system (like oysters), and others go so far as to eat insects and insect products like honey.
