Looks great. I would eat the fuck out of that right now. Do you let yours cool for an hour afterwards? It's torture. I made some a few weeks ago. If you get good fresh mozzarella and mix it with some sharper grated cheese (parmesan or pecorino or whatever) you'll get a much better texture and taste than that dried out pre-shredded stuff.

I've used non bagged freshly grated mozzarella, parm, and Asiago. Different strokes for different folks. I have this shit down to a science for my liking. I cook it at least once a month.

This looks like a great alternative to the way I used to make lasagna when I lived with my parents. Their kitchen was huge and had plenty of counter space... my one bedroom apartment, not so much. Thanks for contributing, OP.
