Get some chicken breasts. butterfly them, stuff the interior with finely chopped sage (and thyme/rosemary if you have them). Wrap with proscuitto or bacon. Sear in a skillet on both sides, transfer to pre-heated oven to cook through.

Make pan sauce from the drippings.

When I think sage, I think saltimbocca. But sage butter is fucking amazing too.

Grind it up in your herb grinder, i use an old wood and metal coffee grinder with a hand crank. Put it into an empty sea salt grinder for when you're cooking. Add to meats or sauces per taste, really.

I like to use sage, garlic, cumin, and oregano in my spaghetti or lasagna.
