What is your favourite brand and flavour of ramen, /ck/? Pic related, with a slice of processed cheese, sriracha and a whole zucchini.

Also, has anyone ever tried any non-ramen instant noodles? Like chapaghetti or other drainable Korean ones? Are they any good?

I lived in a Whitey White-White, suburban-looking neighbourhood of a fuckhuge North American city (one of the top five in NA) for a a few years. The few blacks and hispanics I ever saw in the area worked for the golf course or in the kitchens of area eateries and I've never seen any Asians other than the ones running the dry cleaning and take-out joints.
Anyway, the 'ethnic' section of the area supermarket was full of Ortega and ChiChi's taco/burrito kits, cans of La Choy stuff, Boboli pizza crusts, Maruchan and Nissin packets and other similar atrocities. That's about it.

I was worried that this city wasn't anywhere near as integrated, world-class or international as people made it out to be until I decided "fuck it, I hate this neighbourhood," closed my lease and moved elsewhere.

Now, I live in a different area of the same city that's much more diverse. At one supermarket here, the ethnic section takes up about a quarter of the remaining space after the fuckhuge produce/deli/bakery/fish section (it's all combined as one section; takes up about half the store). And it actually has things that "Ethnic" people buy, not taco kits and pizza crusts.

Can't speak much to ramen as I've been only to Nom Nom and Terakawa (which is down the street from my old apartment) and neither impressed me, but pho is surprisingly good in Philly. Viet in Philly are divided generally between South Philadelphia and North Philadelphia areas and since the SP community is more centrally located (only two miles to Center City and touristy shit while the NP ones are about 11 miles away), most of the places I'll tell you about are there.
There's one place that does Northern-style pho that I know of. Most do Southern-style here (and throughout the US, unsurprisingly).
My favourite pho place closed recently because the owner lady died of cancer and her widower couldn't be arsed to keep it going but my runner up choice is in a shopping center in deeper South Philadelphia near 4th or 5th st and Oregon Avenue. They're weird because they use northern style noodles (wider, square cut noodles) but southern style stock and garnishes. Another good place is in North Philadelphia on Adams avenue but it's fairly out of the way from everything.
The place that does Northern style is on Passyunk Avenue between 16th and 17th st.

Indonesians are mostly (entirely?) found in SP. Soto ayam is really good at Hardena on the corner of Mole and Moore. I misspoke when I mentioned gulai earlier because that place closed. The family moved back to Indonesia, a friend told me.

For Cambodian noodle soup, Pho Nam Vang (old name; think it's called New Phnom Penh now, but has the same owner lady) on 7th where it intersects with both Moyamensing and Wolf. Area is sketchy and dirty. The restaurant is a bit run down. But that pork broth, man. So good. Also, best spring rolls ever.

Taiwanese beef noodle soup is at Ray's, a half block from Terakawa and on the block I used to live on. The addy is 141 n 9th.

Yes, precisely. So is ramen, actually. Ramen is the nipnong mispronunciation of la mian, which is anglicised as "lo mein."

The reason it's called yakisoba when no soba (buckwheat) is used is because when ramen first entered nipnong cuisine, it was called "chuka soba," literally "Chinese buckwheat noodles" despite having no buckwheat in them. This was due to their similarity in thickness.

At some point, the word soba, which literally just means "buckwheat" came to mean "buckwheat noodles" then shifted again with the introduction of ramen to the Japenese to be a catch-all word for any noodle thinner than udon but thicker than somen. "Yaki" just means "grilled, stir-fried or roasted," so "yakisoba" literally means "stir-fried lo mein."

Or adapting it to their own ends like every other culture in the world does, yes.

Italian 'scapece,' a dish of roasted fish dressed with sliced onions and doused in warm vinegar before serving, becomes Spanish 'escabeche,' a dish of fried fish (or chicken or rabbit) dressed with sliced onions and doused in warm vinegar before serving becomes Jamaican 'escoveech,' a dish of fried fish dressed with chilies, onions and other stuffed and doused in lime juice and vinegar before being allowed to marinate overnight and served at breakfast the next day becomes 'ceviche,' a north-coast South American dish of raw fish marinated in lime juice and chili before being consumed as-is.

Who knows if the Italians even originated the fish-in-acidity thing or if it comes from the Greeks or the Arabs or the Turks or somewherethefuckelse. The fact is, foods are highly regional and etymologically related dish names can come to mean very, very different preparations one culture to the next.

lo mein is not la mian.

La (or Lai) Mian's direct translation into English would be "Pulled" (La) and "Noodle" (Mian)

Lo Mien is the noodle that is served dry and the broth/sauce is served on the side.

>> No.6192832

>>6192794
Yes, I know, but in Freedomland, lo mein actually /is/ la mian, if I'm not mistaken. Look up "American lo mein" on google. The one with the broth/gravy on the side is served in /some/ parts of the US but under a different name: yakka, yatgaw or simply yat, depending on where you are. Shrimp and tomato yat is called "Chinese spaghetti" where I am.

For sake of ease and to be better understood by the person to whom I was replying, I was using the terminology >>6190430 himself used.

I wasn't going to correct him when
• it's unlikely that he really cares all that much about the proper terminology
• it's unlikely he'll ever be in a situation, such as leaving the US and going to a Chinese restaurant abroad, where knowing the correct terminology will ever matter to him
• when I perfectly understood exactly what he meant.

That would have been excessively pedantic. Much like you're being right now.

See >>6191499: a term or dish might change when it travels from culture to culture to culture. In the US, particularly the east coast, the term "lo mein" is identical to proper chow mein and is a corruption of 'la mian' which are used to make... chow mein, that's right! Very good!
See, now I'm being condescending. That means I'm talking down to you.

Actually, as the guy who was cramming that yakisoba down when he asked that question, I would rather you get it right and not feed me misinformation.

I dug around after asking that, expecting not to get a response. Long story short it ends up being that yes yakisoba has a connection to chow mein.

The messy part comes from how this translates to American Chinese carryout, because someone somewhere decided to market steamed chow mein as lo mein over here in the EC, which is where the whole connection came to me in the first place.

Or something.

Carryout's fucking weird, man.

>> No.6193080

>>6193003
None of what I gave you was misinformation. I was using the terminology that you yourself used then explained the link between each of the terms, further expanding on their connection in >>6192889 when I felt I had to do so.

Lo mein and la mian are etymologically linked inasmuch as Americans got it confused with la mian and mislabeled it as such. This is called phono-semantic matching and is very, very common, occurring under one of two circumstances:
• when two words or phrases from the same language that are very similar to one another to foreign ears are introduced to a new language and fuse in that language to become one term (such as the case)
• when a word or phrase from one language enters another and sounds very, very similar to a word or phrase in the receiving language (such as 'hacker' entering Chinese from English as 'hei ke' which means 'mischievous/malevolent guest')

>> No.6193256

>>6192889
Do not represent information as correct for the sake of convenience when you know it is not.

>In the US, particularly the east coast, the term "lo mein" is identical to proper chow mein
That depends on how one defines proper chow mein.
A Cantonese/Hong Kong style chow mein is a different product from the 'steamed chow mein' variant. While both are accepted forms of chow mien, it should be noted that the that the particular type of noodle used for Hong Kong style chow mien is referred to as "Youmian" (thin noodle) or "Saang Youmian".
The softer one is more often referred to as "Yi Mien" or "Yee-Fu or E-fu noodles" although it can be substituted with "Cumian" (thick noodle) or Chinese La Mian. However, for it to qualify as actual La Mian, the Chinese literal translation being "Pulled Noodle", it has to be produced under the process for it to qualify as La Mian or else it'd just be a "Cumian"

>In the US, particularly the east coast, the term "lo mein" is identical to proper chow mein and is a corruption of 'la mian' which are used to make... chow mein
Calling X as Y does not mean X = Y. If a far off African village selling hot dogs was in fact, selling hamburgers. That does not make calling a hamburger a hot dog correct.
In fact, let's just do this your way. All pasta is now called spaghetti and according to some research, chow mein is also a dish is basically a vegetarian stir fry with a white sauce, no noodles. So we'll just call that an actual chow mein too.

>> No.6193420

>>6193256
I like how that was a really longwinded way of saying "I have no actual way to refute anything you had to say, so here's a long tangent instead."

And guess what? All ramalama chingchong noodles-and-noodle-dishes are actually called 'spaghetti' in Italy.
All of them.
Rice. Wheat. Egg. Thick. Thin. Stir-fried. Dry. Soup. Sauced/with gravy. Whatever.
Doesn't matter.
They're all 'spaghetti.'

What you fail to understand is that when cultures are introduced to new things from another culture, they will, more-often-than-not, use the name of a similar item already known to their culture to label it rather than use the proper name, such as the nipnongs referring to chow mein as 'yakisoba,' the Italians calling it 'spaghetti cinesi' or East Coast Americans call it 'lo mein.'

And nothing you have to say will ever, ever change the fact that words change meaning when moving from one culture to the next, even to the point of being incomprehensible or laughably incorrect to a speaker of the native language from which the word came. That's just how it is. Let it go and you'll be a lot happier.
