For myself at least fish is something I rarely get, so I always go for the better, more expensive ones. However, tilapia is fine as a staple as it is both cheep and decently healthy, without having a really awful taste like catfish.

For anyone who knows anything about fish they know what is happening. First it was "chilean sea bass" then "basa" now it's "tilapia". They are running out of good fish so they figure out a way to market shit fish instead. Albeit this isn't as egregious at chilean sea bass unless they start marketing it as exotic and and expensive fish.

Cut fish in roughly 2cm pieces.
Bring water to boil.
Add 1 teaspoon vinegar per liter of water
Add 2 tablespoons of salt per liter of water
Gently lay in pieces of fish.

Bring up to a gentle boil, put on a lid and remove from stove.

6-8 mins. Done when you can easily pull bones from the fish.

Its cheap, relatively healthy, has a neutral flavor and doesn't taste or smell "fishy" so pretty much anyone can eat it. Its also very easy to farm, cut into fillets and flash freeze to be shipped anywhere. It shows up on a lot of "healthy choice" menus too.

I personally really like it for cheap dinners. If you live near Florida you can get the wild caught tilapia which has a better flavor. Marinate and prepare cuban style with lime juice, garlic, olive oil and herbs and bake whole. Not sure where the hate for it comes from, at least it isn't fucking carp.

About 2 years after my mom passed away, my dad started dating this new chick who never cleaned, was a health nut, and pretty crazy.
