Reasoning: great basic idea, shitty presentation. Also try using a thinner slice of bacon or perhaps pancetta for wrapping next time. You could try wrapping a little butcher's twine around it to keep the bacon closer to the eel.

Did you cook this on a rack? That's a good way to get the bacon to crisp evenly on all sides.
