>Why are our chips so disgusting and soggy?

Huh? I go by Heston's method (triple cooked). First you boil them a bit, then cool. Next you do a light fry at medium, then remove from oil and cool. Lastly you do a harsh fry at high temp to finish off. There is not a better way to do it at home. I've done it many times, and I imagine it's fairly similar to how fast food fries achieve their end result.

Check this clip for some live action of the fries/chips.
https://youtu.be/CORPxJzIpZk?t=24m27s

This link breaks it all down and in my opinion goes a bit overboard on the process, but whatever:

http://www.insearchofheston.com/2013/10/how-to-make-heston-blumenthals-triple-cooked-chips-recipe-a-definitive-step-by-step-guide/

There used to be a great vid on youtube of just Heston preparing his signature chips in a little kitchen, but I have not been able to find that for about 2 years, wtf?

To me, this is the Brit "chip", but are you telling me he's the only Brit who does this?

So with this new information I must ask, do pubs typically fry up some pre-fried, frozen taters and that is why they have the crisp result vs. maybe a chippy that cuts fresh taters in house and doesn't have time to do the Heston sort of approach? Damned curious now, just trying to make sense of it.

>> No.6545898

you're pretty much spot on. traditional chippies tend to do it the traditional way, whereas gastropubs either outsource their prep to large supply companies or aim for higher margins and hire relatively ambitious chefs - either way the result is crispier.

Oh, the restaurants are great.

The home cooks? Not so much. It's either trend-following yuppies or everyone else whose repertoire is the modern British standard of bolognese-curry-chilli-bangersandmash.

There is no consistent modern British cuisine that anyone actually cooks, it's just a handful of unrelated dishes from other cultures that don't go together at all. That's not a cuisine, that's a lazy attempt to base your home cooking on what you eat in restaurants.

Spoons food is borderline inedible, while hungry horse, hall and woodhouse, taylor walker, beefeater etc. all do food that, while not great, will at least guarantee you something reasonably tasty for reasonably cheap. Whereas at least half of the spoons menu I wouldn't feed to my dog.

I don't think there's much else to say. I don't think there's a British cuisine, I think most Brits cook a small handful of unrelated dishes from different cultures. Other than that it's hipsters chasing after focaccia and quinoa and such.

What do you want me to do to prove this? Of course there are a few British dishes that people cook - I mentioned one of them, bangers and mash. Here's some more - full English. Sunday roast. Shepherd's pie. Maybe Lancashire hotpot if we're really stretching. Generic beef stew, does that count as a dish?

Alright so we have six dishes, one of which I'm not sure I've ever known anyone to actually cook, and the other of which is so undefined that it barely counts as a dish. Is that a cuisine? If it is it's not much of one, and as I said it's supplemented by a whole load of (attempts at) other dishes from various other cultures. I think only Australia has less of a cuisine than this.

The overwhelming majority of people in Britain don't cook pork pies and never will.

For the same reason I didn't include fish and chips in my list of British dishes, even though it's so iconic. Why? Because people don't cook it, they buy it from the chippie. Most people in Britain don't batter and fry their own fish, and never will.

We could of course talk about what dishes are associated with a country, but that's a different question than what dishes are associated with a country that people living in that country regularly cook.

But that's wrong. Hell, there's an entire organisation who spends a good 50% of their time making jams, pickles & preserves. Even my Dad does a mean apple & onion chutney.

But nobody has managed to name any British dishes beyond the six, of which two are kind of tenuous, dishes that I mentioned which British people actually cook.

Don't you think it's a little sad if most of the dishes of a country's cuisine are not dishes that people in that country are capable of making themselves? Pork pies are great, and they're undeniably British food, but British cooking? I don't think so. That would require Brits being able to cook them, rather than just willing to buy and eat them.

The overwhelming majority in any country don't cook much more than staples or convenience foods. There are still a metric fuckton of traditional british dishes that people cook regularly and they aren't as tiny a minority as yu think.

But I really can't think of many. Let's be honest - bangers and mash, Sunday roast, full English breakfast, and shepherd's pie are the British dishes that people regularly cook. Then occasionally Lancashire hotpot, and maybe very occasionally someone will make Cornish pasties. But pork pies? No. Nobody who doesn't consider themselves a 'foodie' or a budding chef will buy the pig trotters necessary to make a pork pie. Other than this... maybe jams or chutnies, but that's a condiment, not a dish. You can't live off chutney. The same objection to pork pies I have to fish and chips, and steak and kidney pudding too. These are things Brits buy, not cook.

I think there's a distinction to be made between dishes that normal people make only occasionally, and dishes that
people other than cooking enthusiasts essentially never make. Also, I'm not denying that there are plenty of tasty dishes in this country's history. But most of them have been destroyed through first rationing and then MUH HEALTH culture. Is this really such an inflammatory opinion?

>Nobody who doesn't consider themselves a 'foodie' or a budding chef will buy the pig trotters necessary to make a pork pie

that's not true, seriously dawg. plus you don't actually need the trotters, you can get the gelatin from all kinds of bits.

making cornish pasties is a regular thing in many families, particularly - shock horror - cornish ones. there are so many other regional dishes you could say this about too. especially puddings, holy shit we make a lot of puddings.

> Is this really such an inflammatory opinion?

you're just overstating it because you are seemingly ignorant of life in britain outside of some small sample of the urban middle class. our culinary culture may be subtle but it is robust.
