Huh? I go by Heston's method (triple cooked). First you boil them a bit, then cool. Next you do a light fry at medium, then remove from oil and cool. Lastly you do a harsh fry at high temp to finish off. There is not a better way to do it at home. I've done it many times, and I imagine it's fairly similar to how fast food fries achieve their end result.

Don't you think it's a little sad if most of the dishes of a country's cuisine are not dishes that people in that country are capable of making themselves? Pork pies are great, and they're undeniably British food, but British cooking? I don't think so. That would require Brits being able to cook them, rather than just willing to buy and eat them.

making cornish pasties is a regular thing in many families, particularly - shock horror - cornish ones. there are so many other regional dishes you could say this about too. especially puddings, holy shit we make a lot of puddings.
