So I recently went shopping and decided to have a nice dinner tonight.
Here we have:
> Beef - Eye of round
> Beef stock - Couldn't get myself to buy bouillon cubes
> Button mushrooms
> Basmati rice
> Spinach
> Bacon strips
> Butter
> Fresh Rosemary and whole pepper

While shopping, I was thinking of a nice risotto of mushroom, bacon, and spinach using the basmati and beef stock. With the steak, just pan sear it in butter and rosemary simply, cracking pepper and salt afterwards.

Any other ideas on what to do with these ingredients? Time isn't a problem so no worries with that. Keep in mind that I do have other ingredients prior to shopping, so if there are some things required, I may have it

Yeah, I see what you mean, I thought the spinach would suffice, but I guess that's just my inner child saying the less veggies the better.

What was wrong with using basmati rice?
Was it the texture being too soft and not separating, or do they tend to be dry and such?

I'd like to know so I can work around it

Wish I did a cook-with thread, but i'll just post the finished product here.

I had made the risotto as stated in OP. Added tomatoes at the very end since I had some at the time. It's also topped with freshly grated parm, but was transferred from a casserole dish

Overall i'm pretty happy with how it turned out, and I managed to make the basmati rice work :)
