What's the problem with those? The trick is to cut the bell peppers along the ridges. That way the pith with the seeds are on the side of the pieces and can be easily cut off.

Oh, son. Stuffed peppers is such a versatile dish, you can stuff them with just about anything and they're pretty great. Try hamburger, rice, cheese and your favorite tomato sauce for high class white trash supper. Shredded chicken (or beef) and onion to recreate something like fajitas. Couscous, spinach, feta, chickpeas, zucchini, squash, etc. Shit's endless.

I got a bell pepper tip for you OP. When you start on a bell pepper, hold it upright and push firmly down on the stem (pic related). The pepper should break in a circle around the stem and the stem will fall into the pepper. Leave it there and slice the outer part vertically from top to bottom, all the way round and up the other side to cut it in half. Separate the halves and you should be left with 3 pieces: the two halves of the bell pepper and the stem (with seeds attached). There might be a little bit of trimming needed but it's the cleanest way of separating the seeds that I know of.

The most annoying thing in my kitchen? Dirt inside my veggies, especially green onions and leeks. I just can't get leeks clean, it's like they've been deliberately packed with mud and whenever I cook with them I have to take them completely apart and spend 5 minutes washing every inch or there's disgusting grit in my food. I'm getting a bag of frozen sliced leek tomorrow to see if they're any better.
