How do I use up a lot of cilantro? A lot of the recipes I like use cilantro, however the grocery stores by me only sell cilantro in massive bunches and nearly all the recipes only end up using less than a fourth of what I bought.

Its not that cilantro is expensive, but I almost always end up throwing out half of what I buy.

I live in a real city and my apartments balcony only really gets direct sunlight a couple hours a day, mostly when its its too cold to have plants. The one herb plant we had died extremely quickly. Plus it provided hardly any herbs and we were always unsure of whether to use it or not because of how few leaves there were. Its much better to just buy unless you actually like tending a garden and have a place for it.

I just chop up all the leaves and separate them from the stems and freeze them, then i either use the stems for curry paste or freeze them as well. They last for around a month in the freezer and if you add them just before cooking is finished the taste is not diffferent from the fresh.

I make something like a gremolata with cilantro and use on meat. Personally, I think it'd be too heavy on the flavor if using it to completely replace parsley, but a quarter part cilantro to parsley works well, and to each their own - if you like it enough to use that heavy, go for it. I tend to chop it and spread it out on paper towels to dry in my fridge when I have a lot left over. It's not as good as fresh, but it is fine when treated like other dry herbs.
